How To make Caramel Shortbread
1 c All-purpose flour
1/2 c Icing sugar
1/2 c Butter or margarine
1/2 c Butter or margarine
1/4 c Corn syrup (dark is best)
1 ts Unflavored gelatin
2/3 c Sweetened condensed milk
An upside down toffee-like confection. First Layer: Measure first 3 ingredients into bowl. Crumble together well. Press in ungreased 8 x 8-inch pan. Bake in 350 F oven for 20 to 25 minutes. Cool. Second Layer: Melt the scond amount of butter and corn syrup in heavy saucepan. Measure sugar in cup. Stir in gelatin to mix thoroughly. Add to saucepan stirring to dissolve. Add condensed milk. Stir, bringing to a boil. Boil 4 minutes stirring constantly. It burns very easily when boiling. Remove from heat. Beat with spoon until it thickens and gets blobby. You will need to take a moment's rest now and then as you beat. Pour over first layer. Chill overnight. Invert on plastic wrap. This makes it much easier to cur through to the bottom. I hope you're all having a great day so far....So here's a good wee recipe for an absolute classic :) Millionaire shortbread, or caramel shortcake as it's also known. This is the first time I've made this and it turned out very well.....I don't have much of a sweet tooth but everybody loved it :) I'll be making this again I'm sure! It's quite time consuming but worth the effort. Coming up tomorrow... it's that time of the week again where I show you what we had for tea during the week and what I made :)

I used:
2 Tablespoons golden syrup (I used Llyons)
400g Condensed milk (I used Carnation)
200g Melted milk chocolate (I used Cadbury Dairy Milk)
160g Plain/ all purpose flour
215g Salted butter (115g for the shortcake, and 100g for the caramel)
100g Soft brown sugar
60g White caster sugar
Edible gold spray (optional)

How to Make Millionaire's Shortbread | It's Super Rich!
I was inspired to make this shortbread after seeing it posted on Instagram by my most prolific baking buddy Lan. If you have spent some time in my YouTube comments section or on our Flickr group, you’d know her pretty well. She’s living proof that all my recipes work.
But she bakes much more than just my breads and cakes and that is where this shortbread comes in. I’ve had millionaire’s shortbread before, but I had never made it though. Caramel is something I love a lot, so finally I decided that it was time to try and make it, and while I’m at it make a video about it too.
There are a couple good lessons in this recipe – the shortbread base and the caramel. Each can be used for many applications, so they’re great skills to learn. Both can be a challenging if you don’t know what you’re doing, but I’m sure that after watching this video you will be able to make them.

5 ingredient challenge round 1. CARAMEL SHORTBREAD BARS
shortbread:
1 c (200g) sugar
16 oz (454g) butter, softened
4.75 c (665g) AP flour
2 tsp salt
bake at 325F (163C) for 50-60 min or until golden brown
caramel:
2.5 c (500g) sugar
10 oz (283g) hot water
10 oz (283g) butter
1 tbsp salt
caramelize sugar. add butter/water mixture. add salt. cook until 250F (121C)

Welcome back to What’s For Tea :) So today I made salted caramel shortcake, or shortbread :) It’s so very tasty, easy to make and relatively inexpensive too!

What I used-
215g (7.5oz) Salted butter (115g for the shortcake & 100g for the caramel)
60g (2.1oz) Caster sugar
200g (7oz) Melted chocolate (I used white, but use what you prefer)
160g (5.6oz) Plain/all purpose flour
400g (14oz) Can of condensed milk
100g (3.5oz) Soft brown sugar
1 Tablespoon sea salt (adjust to your own liking)
2 Tablespoons golden syrup (I used Lyons)
***I used an 8 inch square baking tin***
