How To make Cape Cod Cranberry Bread Bake

french bread loaf, or italian trimmed of crusts, cut in thin slices

Directions:
From Massachusettes' Cape. Delightfully different for Thanksgiving,
Finely grate the peel from the orange. Remove the skin and membranes for the orange. Section the orange and cut each section across into thin slices. Combine the orange peel, orange slices, cranberries 1 1/2 cups sugar and the water in a medium saucepan. Heat to boiling; reduce the heat.
Simmer covered 10 minutes. Remove cover and continue to cook until slightly thickened, about 5 minutes. Remove from heat.
Preheat the oven to 325F. Beat the eggs with the cinnamon in a large bowl until light. Beat in the remaining 3/4 cup sugar, the milk and 1/2 cup cream, Grand Marnier liqueur and vanilla.
Place a layer of bread over the bottom of a buttered 2 qt souffle dish. Using a ladle, add enough egg mixture to cover the bread. Spoon one third of all the cranberry mixture over the top.
Repeat the layers two more times, adding all the egg mixture to the dish before spooning on the last third of the cranberries. Bake until firm, about 1 hour.
Serve slightly warm or at room temperature with heavy cream.

Cranberry Valentine Cookies
Makes 24 Cookies
1 stick butter, melted
1/2 cup brown sugar
1/4 cup sugar
1 egg
2tsp. vanilla extract
1 2/3 cups all purpose flour
1 tsp. baking soda
1/2 tsp. salt
1/2 cup frozen cranberries, chopped
1/4 cup white chocolate chips
1/4 cup valentine sprinkles
1. Preheat oven to 350.
2. Combine melted butter, brown sugar and sugar.
3. Add egg and vanilla extract and mix.
4. Next slowly add flour, baking soda and salt to bowl. Mix until dough forms.
5. Add cranberries, white chocolate chips & sprinkles.
6. Scoop dough and roll into 24 balls and place on a cookie sheet and bake for 10 - 12 minutes.
Cranberry Rosemary Focaccia Bread
Homemade Cranberry Rosemary Focaccia Bread is easy to make and oh so delicious!
Ingredients:
2 cups all purpose flour
1 tsp. Salt
1 1/4 tsp. Instant yeast
1 cup warm water
Cape Cod Select frozen cranberries
Olive oil
Fresh Rosemary
Flaky sea salt
In a medium sized bowl, combine flour, salt, and instant yeast. Stir well. Add the warm water. Using a sturdy wooden spoon, mix until all of the flour is well incorporated. Cover the bowl with a plastic wrap and refrigerate for at least 8 hours and up to 24 hours.
Pour one tablespoon of olive oil into a clean medium sized bowl. Remove the dough from the refrigerator and form it into a ball, turning the edges under until smooth on top. Place the dough ball into the oiled bowl. Cover with plastic wrap and allow to rest in a warm place until the dough is doubled in size.
Lightly butter a baking sheet and top with parchment paper. Pour one teaspoon olive oil into the center of each pan. Dump the dough out onto the parchment paper and form into an 8 inch round, popping any large air bubbles as they form. Use your finger to press dimples all over the surface of the dough. Press a cranberry into each dimple.
Drizzle 2-3 tablespoons of good extra virgin olive oil over the top of dough allowing it to seep around the cranberries. Generously garnish the top of the dough with fresh chopped rosemary or small torn sprigs. Generously sprinkle the top with flaky sea salt. Let the dough rest at room temperature until it just begins to rise again.
Pre-heat oven to 425°. Place the the baking sheet on the middle reack of the oven. Bake for 18 to 23 minutes, until the tops are golden and the undersides are crisp. Remove pan from the oven. With a metal spatula remove bread round from the pan and transfer to a cooling rack. Sprinkle with additional flaky sea salt if desired.
Serve warm or at room temperature with small plates or shallow bowls of equal parts Balsamic vinegar and olive oil for dipping.

Cranberry Cream Cheese Jalapeño Pastry
A quick and delicious appetizer!
1 8oz block of cream cheese
1 jalapeño diced (remove seeds)
1/2 cup whole Berry cranberry sauce (1 cup frozen cranberries, 1/4 water, 1 tbsp. lemon juice, 1/2 cup sugar and 1/4 cup honey)
Chives
2 tubes Puff pastry (recipe makes two!)
Preheat oven to 375
Prepare baking tray with cooking spray
Place pastry triangles in a circle creating a ring
Mix cream cheese, jalapeño, chives and cranberry sauce in a bowl. Mix to combine.
Scoop mixture into pastry circle
Fold pasty over mix creating a ring or wreath
Bake for 9-12 minutes or until pastry is cooked and mix is warm.
Sprinkle additional chives on top and serve.
