-JUDY LAUSCH DGSV43A 3 Chicken breasts, whole 1/2 c Onion 1 ts Oil 1 c Catsup 1/2 c Brown sugar; packed 1/2 ts Orange peel; grated 1 1/2 c Cranberries; fresh or -frozen Heat oven to 400*. Grease 13x9 in. (3 qt.) baking dish. Place chicken breast halves in greased dish. Bake at 400* for 25 min. Meanwhile, in medium skillet over medium heat, cook and stir onion in hot oil until tender. Add catsup brown sugar and orange peel; blend until brown sugar is dissolved. Stir in cranberries. Spoon over partially baked chicken breasts. Bake an additional 20 min or until chicken is tender. -----

Let’s face it – a boneless skinless chicken breast can be pretty boring. But it certainly doesn’t have to be that way. Take these Cranberry Sage Stuffed Chicken Breasts as an example – they’re boneless skinless breasts all dressed up with bready stuffing, fresh sage, and tart cranberries. (In other words, they’re incredibly delicious. And they’re easy to make, too!)

Approx. 2 1/2 lbs split wings
1 tbsp Olive/canola/corn oil
2 - 3 tsps poultry Seasoning
1 1/2 tbsp Wet Jerk seasoning
Black pepper if desired
1 - 2 tsps soy sauce
1/2 - 1 tsp Browning
12 allspice berries, crushed
1/4 tsp cinnamon

You don’t even know how amazing this dish is. A staple in our household for a while now, our family asks for it all the time and we can’t (nor want) to argue with them – it’s just that good. While it’s pretty easy to make a delicious roasted chicken, we amped up the flavor with this recipe using cranberries, fresh rosemary and balsamic vinegar. First whip up the marinade, then let the chicken soak up all the flavor. Pop it all in the oven and you’re good to go!
Our two favorite things about this recipe are the crispy skin that you get from cooking the chicken first skin side down, then putting it under the broiler for a few minutes, and the sauce that’s bursting with flavor that we scoop up and drizzle over our whole plate. But if you’re in a pinch and looking for a main dish that doesn’t require too much pre planning but would still impress, this Roasted Cranberry Glazed Chicken is a sure win!
Using the pan drippings, we add Ocean Spray’s Cranberry Juice along with some warm spices like clove, cinnamon and a bay leaf to create a tart, sweet and flavourful sauce that will be the star of the show.
