California Pizza Kitchen's BBQ Chicken Pizza Recipe - Get the Dish
If you've ever eaten at California Pizza Kitchen, chances are you've tried the restaurant's most signature menu item, its BBQ chicken pizza. The unconventional pie, which was introduced at the opening of CPK's Beverly Hills restaurant in 1985, became instantly popular and opened the door to the idea of nontraditional toppings on a pizza crust. While the all-American combination of sweet and spicy barbecued chicken, gooey cheese, and hearty pizza crust has been copied all over the world, we went behind the scenes at CPK's test kitchen to learn exactly what goes into the original. CPK's BBQ Chicken Pizza
From California Pizza Kitchen
The introduction of this pizza at the opening of CPK's Beverly Hills restaurant in 1985 ignited the craze that is California-style pizza.
Ingredients
For BBQ chicken:
10 ounces boneless/skinless chicken breasts cut into 3/4-inch cubes
1 tablespoon olive oil
2 tablespoons favorite BBQ sauce (we use a spicy-sweet sauce)
For pizza:
2 balls CPK pizza dough or other premade pizza dough
Cornmeal, semolina, or flour for handling raw pizza dough
1/2 cup BBQ sauce
2 tablespoons shredded smoked Gouda cheese
2 cups shredded mozzarella cheese
1/4 small red onion, sliced in 1/8-inch pieces
2 tablespoons chopped fresh cilantro
Directions
Make the BBQ chicken: In a large frying pan, cook the chicken in olive oil over medium-high heat until just cooked, 5 to 6 minutes. Do not overcook. Set aside in the refrigerator until chilled through. Once chilled, coat the chicken with 2 tablespoons BBQ sauce; set aside in the refrigerator.
Preheat the oven: Place a pizza stone in the center of the oven and preheat to 500ºF for 1 hour before cooking pizzas.
Construct the pizzas: For each pizza, use a large spoon to spread 1/4 cup BBQ sauce evenly over the surface of the prepared dough within the rim. Sprinkle 1 tablespoon smoked Gouda cheese over the sauce. Cover with 3/4 cup shredded mozzarella.
Distribute half the chicken pieces evenly over the cheese (approximately 18 pieces). Place approximately 18 to 20 pieces of red onion over the surface. Sprinkle an additional 1/4 cup mozzarella over the top of the pizza.
Transfer pizza (or pizzas; the 2 pizzas may be prepared simultaneously if you are careful in placing the pizzas at opposite corners of your pizza stone) to the oven; bake until crust is crisp and golden and the cheese at the center is bubbly, 8 to 10 minutes. When pizza is cooked, carefully remove it from the oven; sprinkle 1 tablespoon cilantro over the hot surface. If necessary, repeat with remaining ingredients for a second pizza. Slice and serve.
Makes 2 BBQ chicken pizzas.

This is a taste test/review of the California Pizza Kitchen BBQ Recipe Chicken Pizza. It has BBQ seasoned grilled, white-meat chicken, red onions, cilantro, Mozzarella and hickory-smoked Gouda cheeses over sweet and tangy BBQ sauce. It was $7.88 at Walmart. 1/3 pizza (139g) = 290 calories

Tostada Pizza || California Pizza Kitchen style pizza, crispy, delicious, amazing pizza
This California Pizza Kitchen inspired recipe fuses together the amazing flavor of tostadas with the crowd-favorite pizza. If you are looking for a unique twist to your normal pizza Fridays, this recipe is a must-try.
Makes 4 pizzas
Ingredients:
Beans-
2 cups of black beans
5 cups of water
Salt to taste
3 garlic cloves
1 teaspoon red chili powder
Crust-
2 cups of water
7 grams of yeast
1 teaspoon sugar
2 cups whole wheat flour
2 cups all-purpose flour
Salt to taste
1/4 cup oil and 1 teaspoon of oil
Dry flour
Sauce-
1 part sour cream
1 part ranch
To prepare the pizza-
Mexican cheese
Mozzarella cheese
Shredded lettuce
Green onion
Recipe:
Beans-
Place the black beans in a bowl
Add 2 cups of water and rinse twice
Add another 3 cups of water and soak for 10 hours
Once it is soaked and salt to taste
Then, cook for 7-8 whistles on a low flame
Add the garlic and red chili powder to the boiled beans
Crush it
There should be some pieces left
Crust-
Heat 2 cups of water until it is warm
Set aside 1 cup and add the yeast and sugar
Mix well and let it sit for a while
Place the whole wheat and all-purpose flour in a bowl
Add salt and 1/4 cup of oil
Start mixing the dough
Once it is properly mixed, add the yeast water
Knead it into a soft dough
Gradually add the other cup of water
Knead a little with your knuckles
Then add a teaspoon of oil and knead for a few seconds
Put it in a warm place for 1 1/2 hours
Then, sprinkle dry flour on a silicon mat
Add the dough
Knead it a little and roll it into a ball
Cut it into four equal parts and put three aside
Sprinkle some more dry flour and roll it into a circle
Once it has the pizza shape, poke holes in it with a fork
Pinch the sides of the crust to make it rise a little
Place it on a pizza pan and bake at 400 degrees F for 10 minutes
Sauce-
Mix the sour cream and ranch together
Place some of it in a piping bag or bottle
To prepare the pizza-
Flip the pizza crust over
Place some sauce on it and spread it around
Leave an inch from the sides
Spread some beans on top of it
Spread some Mexican cheese and mix the edges around
Doing this makes sure that the sauce won't run down the edges
Add some more Mexican cheese and some mozzarella cheese
Bake at 400 degrees for 5-6 minutes or until the cheese melts
Cut it into eight equal parts
Put some shredded lettuce, green onions, Mexican cheese, and tortilla strips on top
Broil high for 1-2 minutes
Spread some sauce on top and lightly cut the top layers based on the mark in the crust
Serve and spread some extra sauce on top if you want it
