We love cottage pie and Shepherds pie. It's such an easy dish to make and so so delish. This time round, instead of making the traditional cottage pie, we decided to add a Chinese twist to it, hence it's called Fusion Style Cottage Pie. If you love cottage pie too but want to different taste profile to it, give this recipe a try.

Fusion Style Cottage Pie
Ingredients:
Serves 5 - 8 pax

Grounded beef
========
150g [5.29oz] chopped red onion
800g [28.2oz] grounded beef
1.5 tablespoon spicy broad bean paste (辣豆瓣酱)
1 tablespoon oyster sauce
0.5 teaspoon grounded Sichuan pepper - dry roast Sichuan peppercorns and pound them finely
2 tablespoons plain flour (all-purpose flour)
200ml [6.76fl oz] water (add more later if your beef looks dry)
0.5 teaspoon salt
Mashed potatoes

1kg [35.27oz] potatoes
40g [1.41oz] unsalted butter
1.5 teaspoons salt or to taste
1 teaspoon grounded black pepper
2 slices cheddar cheese
Cook the beef and potatoes first over the stove. Then assemble the dish in an oven-proof pot and bake it for about 15 mins at 220C (428F). Remember to preheat your oven before the actual baking.

Recipe of the Day: Cajun Pot Pie
Maleeka Harris of Chef Rabbit Catering shares a recipe for Cajun Pot Pie.
Chef Rabbit's Cajun Pot Pie
*Required* 4 Oven-proof Deep Bowls
3tbsp Olive Oil
6tbsp Butter
1/2c Green Bell Pepper (Chopped)
1/2c Red Bell Pepper (Diced)
1/2c Yellow Onion (Diced)
1/2c Baby Bella Mushrooms (Chopped)
6oz Sausage (Cubed)
2-3tbsp Garlic (Minced)
1/4c Bourbon
1/2c Carrots (Cubed)
2c Yukon Potatoes (Cubed)
1lb Shrimp (Cubed)
3tbsp Cajun Seasoning
3tbsp Flour
3c Heavy Cream
1tbsp parsley
1/8c Green Onion
Pastry Dough
-Store Bought or recipe of your choice
Egg Wash
INSTRUCTIONS
-First, thaw out once sheet of puff pastry. Once thawed, cut into 4 circles approximately 1/2 inch larger than the top of your oven-proof crock.
-Blanch cubed carrots, (Once water comes to a boil, add a liberal amount of kosher salt, boil for 2 minutes. Remove from boiling water and place in an ice bath for 1 minute. Remove to a bowl and set aside.) then blanch cubed potatoes next.
-In a large high-sided pot, heat olive oil and butter. Saute onions, bell peppers for about 2 minutes then add baby Bella mushrooms. Add sausage and render for about 2 minutes. Add Cajun Seasoning and minced Garlic.
-Add 1/4 cup of bourbon and cook for 1 minute and allow most of the bourbon to evaporate.
-Add flour, thoroughly mix with the sausage and veggies. Stirring constantly so the flour doesn't stick or burn on the bottom of the pot.
-Add Shrimp and Stir to completely blend. Stir in the carrots and potatoes to combine.
-Preheat the oven to 400 degrees F.
-Stir in heavy cream. Once the mixture comes to a low boil, lower the heat and simmer for 10 minutes.
-Remove from heat and stir in parsley and green onions. For easy clean-up cover a large baking sheet with foil, then ladle this velvety mixture into 4 buttered oven-proof bowls.Place the pastry circle over the top of each bowl. Whisk one egg in a small bowl and brush to top of each pastry circle.
-Cut an X in the top of each pie to allow the steam to vent.
-Place the pot pies in the preheated 400 degree oven and bake for 12 to 15 minutes, until the pastry is a beautiful golden brown.

Oyster Dressing Ingredients
Prepared Homemade Cornbread (see below) or use 2 boxes of Jiffy Cornbread Mix
2 cups chopped onion, celery, bell pepper mix
3 garlic pods minced
3 cups chicken stock
1.5 pounds of breakfast sausage, ground beef, or other sausage combination
1/2 stick butter
1 pint fresh oysters
Chopped green onions for garnish
Salt, Black Pepper, and Tony’s Creole Seasoning
Chopped Sage and Parsley
Additional options: chopped pecans, dried cranberries, fresh cherries (chopped)
How to Make Oyster Dressing
Preheat oven 325 F.
Crumble cornbread and place in a large mixing bowl.
In a skillet, brown the sausages and crumble. Drain any excess oil using a colander. Set aside.
Add oysters and sauté about 2 minutes or until the oysters curl.
Strain and then chop if the oysters are large.
Add butter and onion, celery, and bell pepper to the pot. Sauté till softened 5-10 minutes
Next, mix the trinity, sausage, oyster, chicken stock, and corn bread crumbles.
Move mixture to a casserole dish or deep baking pan.
Bake covered with foil 35-45 minutes.
Then, remove foil and continue to bake for another 15-20 minutes to brown the cornbread dressing on top.
Remove from oven and garnish with green onions.
Note: The Cornbread Dressing was perfectly seasoned without adding salt, black pepper, & Tony’s.
HOW TO MAKE HOMEMADE CORNBREAD
1 cup Stone Ground Corn Meal
1 cup all purpose flour
4 teaspoons baking powder
1/2 teaspoon salt
1/3 cup sugar
2 eggs
1 cup milk
1/4 cup oil plus more for greasing the cast iron skillet
Preheat oven to 400F
Mix all dry ingredients. Add eggs, milk, and oil. Mix well.
Grease a 10” iron skillet
Bake until golden for 20-25 minutes
