Boudin and Crawfish Stuffed Bell Peppers
Hello Friends! Stuffed bell peppers for for dinner is a popular dish in the Texas and Louisiana. I have two different recipes for them and will share the ground beef/turkey at a later date.

Boudin and Crawfish Stuffed Bell Peppers
Ingredients
4 Green Bell Peppers, cut into halves, seeds removed
1 tsp chicken bouillon
1/4 cup Yellow Onion, diced1/4 cup Celery, chopped
1/4 cup Green Bell Pepper, diced3 tbs Parsley, chopped1 lb Best Stop Smoked boudin 1 lb Crawfish tails, peeled and deveined
1 can Rotel Tomatoes with Green Chilies
3 tbs Tomato paste
1 cup Pepper Jack cheese,
1 cup bread crumbs (Homemade or Panko)
1 tsp Cajun seasoning
1/4 tsp garlic powder
1 tsp thyme1/4 tsp Salt and Black Pepper1 Large Garlic Clove, minced
2 qts cold water
2 cups ice cubes
Directions
Preheat oven to 400.
Lightly oil a baking dish.
Wash the bell peppers. Remove the tops and the seeds from the bell peppers. Cut the bell peppers in halves.
Blanch the bell peppers in water on high heat for 10 -13 minutes. Reserve 3/4 cup of the bell peppers water and set aside. Then remove them from the water and place in an ice bath with cool water and ice cubes for 10 minutes. Dry the bell peppers with a paper towel.
Cook the boudin according to the package.
Add 1 tablespoons of avocado oil to a large skillet on medium high heat. Add the diced vegetables and saute for three. Remove the boudin’s casing and add to the diced vegetables .
Add the Rotel tomatoes and green chiles, the crawfish with its juice, and the tomato paste. Stir for two minutes. Add the cream cheese and the seasonings. Stir in the bell pepper water.
Add 1/2 cup of bread crumbs to the boudin mixture. Stir in 1/4 cup cubes Pepper Jack cheese.
Stuff each bell pepper with the loose boudin and place in the baking dish.
Add more cheese if desired and sprinkle the tops of the bell peppers with the remaining bread crumbs.
Cover with aluminum foil.
Bake on 400 for 35-40 minutes.
Let it cool for 5-7 minutes before serving.

Cajun BBQ Jalapeño Slammers - Southern Football Fare!
New Orleans, Louisiana has fabulous music and wonderful food - which includes BBQ! Today we are making some of that BBQ, it's my Cajun Chicken Jalapeño Slammer. The chicken is seasoned, cooked and shredded and mixed with a yummy Jalapeño BB Sauce. Let me show you how easy it is to prepare and serve at your Super Bowl party!
Total Time: 1 hr. Serves: 6-8 Slammers
Ingredients
• 4 boneless skinless chicken breasts
• 1-2 tablespoons Cajun Seasoning (recipe for homemade is below or use your favorite)
• ¼ cup brown sugar
• 1 tablespoon olive oil
• 1 teaspoon salt
• 6-8 of your favorite sandwich rolls
Pound the chicken breasts so that they are 1” thick.
Line a baking pan with aluminum foil. Drizzle chicken with olive oil, sprinkle with brown sugar and Creole seasoning and rub it in.
Bake chicken in 450 degree preheated oven for 20 minutes. No need to turn.
Broil on high for additional 2-3 minutes of cooking.
Remove chicken from pan to cutting board and let it cool.
Shred cooled chicken and mix in bowl with your favorite Cajun BBQ sauce until chicken is coated (recipe for homemade is below). Serve hot in a roll with cheese on top and dill pickle chips. Add extra sauce to taste.
CAJUN SEASONING
2 tbsp smoked paprika
1 tbsp onion powder
1 tbsp pepper
1 tbsp garlic powder
1 tbsp cayenne powder
1 tbsp oregano
¼ tsp red pepper flakes
Mix and store in airtight container.
CAJUN BBQ SAUCE
1 cup ketchup
2/3 cup brown sugar
2/3 cup prepared mustard
¼ cup Worcestershire sauce
1/3 cup apple cider vinegar
1 jalapeno, cleaned and finely chopped
1 tbsp Cajun Seasoning
Whisk all ingredients together in a saucepan over medium heat and bring to a simmer.
Add the Jalapeno and Cajun seasoning.
Return the sauce to a simmer. Reduce the heat to maintain a low simmer for about 15 to 20 minutes.

●1/4 cup olive oil
●1/2 cup spice rub from Cajun-rubbed spiced turkey

Ingredients
Turkey wings, Black & White Pepper, Holy Smoke seasoning, Poultry seasoning, Smoky garlic and onion seasoning, All Purpose flour 3 TBSP,
Prep instructions

- rinse and clean Turkey wings, pat dry
- season evenly on both sides with Smoky garlic & onion season, poultry seasoning, holy smoke seasoning pat lightly into skin.
- add seasoned turkey wings into a glass bake dish pour 1/3 - 1/2 cup of chicken broth cover with foil. Preheat oven to 350.
COOK Directions
SMOTHERED GRAVY - In a separate skillet add 2 cans of cream of mushroom roasted garlic into skillet with 3 TBSP melted butter, stir well on medium heat. Add 1/2 cup of chicken broth, reduce heat to low simmer for 10 mins stirring occasionally mix well until you reach your desired gravy consistency. Add additional 1/2 cup of broth if gravy becomes slightly thicker than your desire this will make it perfectly pour-able and adhere to your wings.
TURKEY WINGS
- Preheat stove top to 350 degrees, once preheated add covered wings into stove begin cooking. Cook until internal temp reaches 165. Remove from oven uncover add back to oven cook additional 15-20 mins for add juiciness and crisp skin.
- Prepare side of your preference plate up, serve it up to your family/friends, please enjoy!! Enjoy from my home to to yours!
