How To make Butterscotch Squares
1/4 cup butter
1 cup brown sugar
1 egg
1/2 cup chopped nuts
1 teaspoon vanilla
2/3 cup flour
1/2 teaspoon salt
1 teaspoon baking powder
Melt butter then add brown sugar, unbeaten egg, nuts and vanilla. Mix and sift dry ingredients and add to first mixture. Bake in a shallow buttered pan in a moderate oven, 350 degrees. for 30 minutes. Cool on a wire rack.

My husband loves the butterscotch squares at See's Candies. But, it can get expensive to feed his habit! I came across a recipe for copycat butterscotch squares. They looked so good, that I had to make them. They are delicious. The texture is similar to old-timey fudge. The flavor is deep and rich, similar to penuche. The only change I made was dipping my candies in chocolate chips. Most of my batch was dipped in white chocolate (my husband's favorite).

Ingredients:
1/2 cup butter
1 cup peanut butter
300 g butterscotch chips (1 bag)
4 cups coloured mini marshmallows (1 bag)
1 tsp vanilla extract optional
1 cup Rice Krispies optional
CARAMEL BARS | How to Make Caramel Bars ala Max’s | Ep. 69 | Mortar and Pastry
These caramel bars are very chewy and has that unique caramel flavor. It bakes with a thin crust which adds texture and crunch together with the added cashew nuts which adds more flavor. If you have tried and loved Max’s caramel bars, you might also love this recipe!
Ingredients:
1 ½ cups softened butter
1 cup sugar
6 egg yolks
1 tsp vanilla
1 can (387g) condensed milk
2 cups all purpose flour
1 cup powdered milk
1/2 tsp salt
1 cup cashew nuts (reserve half cup for toppings)
• Bake at 180C for 35-40 minutes or until golden brown
• Let it cool completely before slicing
• Crust on top softens as it cools and absorbs moisture
• You can also bake it in a 9x12 rectangular pan for thinner caramel bars. Use the same 8x8 square pan if you like it thicker. *Baking time may vary
• This recipe makes 16 thick bars (baked in 8x8 pan) or 24 thin bars (baked in 9x12 pan)
