Making Oatmeal Butterscotch Bars
A how-to for making a delicious snack!
Ingredients:
1 cup (2 sticks) butter or margarine at room temperature
1 1/4 cups brown sugar
3/4 cup white sugar
2 eggs
1 tsp pure vanilla extract
2 cups flour (can substitute non-gluten flours)
2 tsp baking powder
1/2 tsp salt
2 cups quick-cooking or regular oats (can substitute gluten-free oats)
3/4 cup chocolate chips
1/2 - 3/4 cup butterscotch chips
Preheat oven to 375
Cream together the butter or margarine, sugars, eggs, and vanilla.
In a separate bowl, combine the flour, baking powder, and salt.
Gradually add to the creamed mixture.
Fold in oats, chocolate chips, and butterscotch chips.
Spread in a greased 10 rimmed metal pan, using a spatula or your hand to press into place.
Bake for 20 minutes.
Let cool, but cut while still warm, as knife will go through them more easily.
Makes about 35 bars
I flubbed a little by adding my dry ingredients all at once then throwing in banana unnecessarily for more moisture, but it still tasted really good!

1 cup unsalted butter melted and cooled until no longer warm to the touch (226g)
3/4 cup light brown sugar firmly packed (150g)
3/4 cup dark brown sugar¹ firmly packed (150g)
2 large eggs room temperature preferred
1 1/2 teaspoons vanilla extract
1 3/4 cup + 2 Tablespoons all-purpose flour 230g
1 Tablespoon cornstarch
1 teaspoon baking soda
¾ teaspoon salt
¼ teaspoon ground cinnamon optional
3 cups old fashioned rolled oats² 270g
1 ½ cups butterscotch chips plus additional for topping if desired (255g)

Instructions

INSTRUCTIONS
1. Melt butter over medium heat about 5 minutes, until bubbling and amber. Transfer to a small bowl and place in fridge. Don't forget the browned bits!

3. Whisk together flour, baking soda, and salt.
4. Add sugar, brown sugar, and cinnamon. Mix well.
5. Add 2 eggs. Mix well.
6. Add cooled brown butter mixture from fridge. Mix well.
7. Add oats and chopped See's Butterscotch Squares. Mix well.
8. Form cookie dough into 2 tablespoon sized cookie dough balls. Place on baking sheets, about 2 inches apart.
9. Bake for 8-10 minutes or until slightly browned around edges.
10. Remove from oven, sprinkle on sea salt, and enjoy!
