How To make Butterscotch Banana Bread
3 1/2 c Flour
1 1/2 c Sugar
4 ts Baking powder
2 Eggs
1 ts Baking soda
1/2 c Butter -- melted
1 ts Cinnamon
1/2 c Milk
1 ts Nutmeg
2 2/3 c Chopped nuts
1 ts Salt
12 oz Butterscotch chips
2 c Mashed bananas
Preheat oven to 350. Mix all DRY ingredients EXCEPT THE SUGAR and set aside. Cream together butter and sugar until creamy. Add eggs and bananas. Gradually add flour mixture alternating with milk. Mix until well blended. Stir in butterscotch morsels and the chopped nuts. Pour into 2 greased and floured loaf pans. Sprinkle remaining nuts on top. Bake 60-70 minutes. (If you'd prefer making 4 small loaves, bake 50 min. at 350. Cool 14 min. and remove from pans or

Gluten Free Chocolate-Butterscotch Banana Bread
As I deplete (who are we kidding - just scratch the surface) of what is in my pantry, I found this gluten-free baking mix I purchased at Aldi. I don't recall why I did it. I made a joke to some friends that it's time to get rid of this garbage - no offense to my gluten intolerant peeps! I also had a zipper baggie of some semi-sweet chocolate chips mixed with butterscotch chips - a combo I love when I bake blondies. Bananas were in my freezer, and I don't have a rule about buying new, fresh ingredients, so I figure since the bananas are a bit older, if this experiment does not work out, I really haven't lost out on anything. Banana Butterscotch Bread
Banana Butterscotch Bread is great combination of banana, butterscotch, and walnuts to create this incredibly delicious bread. Banana and Butterscotch are great flavors together and this Banana Butterscotch Bread is no exception. This bread can be enjoyed anytime of day and I particularly enjoy a slice for breakfast and another slice after dinner and tea. I encourage you to head to the kitchen and make this amazing Banana Butterscotch Bread for your family, friends and/or guests. Here is the recipe:
354g/ 2-3 medium ripe bananas
113g/ 8 tbsp. unsalted butter (1 stick)
133g/ 2/3 cup granulated sugar
4g/1 tsp ground nutmeg
114g/ 2 large eggs
4g/ 1 tsp vanilla extract
4g/ 1 tsp maple syrup
96g/ 1/3 cup butterscotch sauce (see recipe)
85g/ ½ cup butterscotch morsels
200g/ 1 2/3 cup all-purpose flour
4g/ 1 tsp baking soda
2g/ 1/2 tsp salt
64g/ ½ cup sour cream
64g/ ½ cup chopped walnuts
Preheat oven to 350F/176C
Butterscotch sauce:
195g/ 1 cup dark brown sugar
57g/ 4 tbsp. unsalted butter, (room temp)
6g/ 1.5 tsp vanilla
2g/ ¼ tsp salt
235g/ 1 cup heavy whipping cream
In a saucepan over medium heat, add butter and sugar, combine, and ensure sugar has dissolved.
Bring mixture to a simmer and add heavy cream in 3 increments until well combined (about 5 minutes).
Once the sauce thickens (225F/107C), reduce heat to low, and add vanilla and salt.
Remove from heat and allow to cool completely before using.
Can be stored in the refrigerator.
For the Banana Butterscotch Bread:
In a separate bowl, mash bananas with a fork until and creamy, cover and set aside.
In a large bowl cream butter and sugar
Add eggs, vanilla. Maple syrup, butterscotch sauce and combine
In a separate bowl combine flour, baking soda and salt and set aside
Add dry to wet ingredients and combine
Fold in bananas and sour cream
Fold in walnuts and butterscotch morsels
Transfer batter to a greased loaf pan of your choice.
Bake 350F/176C degrees for 70 minutes/ until toothpick comes out clean (ovens vary).
Allow to cool and glaze the top with butterscotch sauce.
