Gluten Free Chocolate-Butterscotch Banana Bread
As I deplete (who are we kidding - just scratch the surface) of what is in my pantry, I found this gluten-free baking mix I purchased at Aldi. I don't recall why I did it. I made a joke to some friends that it's time to get rid of this garbage - no offense to my gluten intolerant peeps! I also had a zipper baggie of some semi-sweet chocolate chips mixed with butterscotch chips - a combo I love when I bake blondies. Bananas were in my freezer, and I don't have a rule about buying new, fresh ingredients, so I figure since the bananas are a bit older, if this experiment does not work out, I really haven't lost out on anything.
