Ingredients:
2 cups of all-purpose flour - 240g
4 eggs (separated)
2 cups of milk - 474ml
2 Tbs of sugar - 25g
1/2 stick or 4 Tbs of unsalted butter - 60g
1/2 tsp of vanilla extract - 3ml
1/2 tsp of salt - 3g
2 tsp of baking powder - 8g

Belgian Waffle Iron:
Makes about 6 Large Belgian Waffles. The amount will vary depending on your waffle iron. You don't need a fancy waffle iron as I have, but since I make waffles all the time I splurged and got a nice one.

Hello and welcome to In the Kitchen with Matt, I am your host Matt Taylor. Today I am going to teach you how to make classic Belgian Waffles from scratch. Let’s get started. For the ingredients we need, 2 cups of flour, 4 eggs separated, 2 cups of milk, we need 2 tablespoons of sugar, we need a half of a stick of butter, which is about 4 tablespoons, we need a half of a teaspoon of vanilla extract, we need a half of teaspoon of salt, and we need 2 teaspoons of baking powder. So first, what we are going to do is we are going to take our sugar and we are going to combine it with our eggs. Great. Then we are going to take our mixer and we are just going to mix this together. Ok. Now what we are going to do is take our melted butter, and go ahead and add that, take our vanilla extract, and go ahead and add that. And let’s take our milk and go ahead and add that, and we will give it a light mix. Not too much, we are going to take our flour, and go ahead and add that, it’s ok if it doesn’t get all in there. Salt, baking powder, go ahead and just sift it. If you don’t have a sifter then don’t worry about it. Ok, and now I am just going to take a hand whisk and I am going to mix it together, instead of using a hand mixer for this part. Don’t want to over mix it. Get it so it is all nice and mixed together. Like that, great. Now the next part, is we have our egg whites here, and what I am going to do is switch out the attachment on my little hand mixer and get this little whisk, and I am going to whisk this until it is nice and mixed, until there are peaks formed. All right our egg whites are nice and mixed. And the reason why we have these separated is it is going to help make our waffles nice and fluffy. Ok then what we do is take our egg whites and we will just pour it in there. Ok, set that aside. We will take our whisk again and we are just going to barely fold it all in there, we don’t want to over mix it at all, we just want to lightly get it all folded in. Just fold it in, like that. And now our batter is ready to go, on to the next step. Ok, once our waffle iron is all heated up, we will go ahead and give it a good spray, with kitchen spray, alright, and we will get some batter here, this one has a little line on it, ok, we will go ahead and put it all over. Close it, turn it upside down, and wait until it is done. Mine has an indicator light when it is done and it will beep. All right it is ready to go, we will turn it back over, and open it up. Wow, look at that, amazing, and you just take a little fork like this, and grab it, and put in on your plate, and on to the next one. And you keep doing that until they are all done. All right our classic Belgian waffles are done. They were super easy to make, they came out super thick and fluffy, they look amazing. My toppings that I have on this one, classic maple syrup and powdered sugar.

Greetings! This morning I wanted something yummy for breakfast. Being a weekend, I try to cook breakfast for the family. I also try to use and rotate my food storage. Waffles were on the menu. Not just any waffles though! Butter pecan waffles! These were quick and easy and use many items from food storage. You can make the from food storage all the way by using an add water mix and the brown sugar, extracts etc. You can choose to use the add water mix and still mix it up like I have. It will be fine!
I used the pancake and waffle mix that I got from the LDS cannery about three years ago and I really like it. It is made with cake flour and has a finely milled texture. It also has the baking powder and salt mixed right in. It does call for milk, egg and oil. I added buttermilk, milk, egg, oil and brown sugar as well as some chopped pecans.
I cooked these up in my waffle iron, but if we were in a grid down situation you could use the variety that you place over the camp fire. You could also leave out the oil and add a bit more milk, and simply make butter pecan pancakes. I love to make different things from the items in my food storage. You can also use pancake mix as a base for muffins and quick breads or even for impossible pies for dinners!
I hope this give you some idea about what else you can use your pancake and waffle mix for because we should be using our food storage everyday. We need to rotate and restock and use what we eat and eat what we store because in the event that we will actually have to live through some horrible time, we will at least know what we are doing with what we have stored and apply our lifestyle as if nothing was different!

Pecan Waffles with Dried Fruit Compote | Emeril Lagasse
These pecan waffles are irresistible! Treat your family or friends by whipping up a batch of these simple yet delicious waffles for breakfast or brunch. The dried fruit compote and a drizzle of maple syrup are the perfect accompaniment. This waffle recipe is sure to become your go-to waffle recipe!
PECAN WAFFLES WITH DRIED FRUIT COMPOTE
SERVES 4 TO 6
1 1/2 cups all-purpose flour
1/3 cup ground pecans, plus more for garnish
1/3 granulated sugar
1 tablespoons baking powder
1/4 teaspoons salt
2 large eggs
1 teaspoon vanilla extract
1 3/4 cups whole milk
2 tablespoons unsalted butter, melted, plus more for waffle iron
Dried Fruit Compote, chilled (recipe follows)
Pure maple syrup, for serving (optional)
In a mixing bowl combine flour, ground pecans, sugar, baking powder and salt. In another bowl beat the eggs and vanilla slightly. Whisk the milk and butter into the egg mixture. Whisk the flour mixture into the egg mixture. Stir until combined yet still slightly lumpy. Pour 3/4 cup batter onto grids of a preheated, lightly greased waffle iron. Close lid quickly: do not open during baking. Bake according to the manufacturer's directions for the waffle iron, until golden brown and lightly crisp, about 5 to 5 1/2 minutes.
Serve hot waffles with fruit compote and maple syrup, if desired. Garnish with extra ground pecans.
DRIED FRUIT COMPOTE
MAKES ABOUT 6 CUPS
2 pounds mixed dried fruit, such as figs, apricots, cherries, cranberries, apples, prunes, or blueberries
2 cups boiling water
1/2 cup fresh orange juice
1/4 cup cognac
3/4 cup water
1/4 cup sugar
2 cinnamon sticks
1/8 teaspoon ground cloves
1 vanilla bean, split
Place the dried fruits in a large bowl and cover with 2 cups of boiling water. Let the fruit sit for about 1 hour, then drain. Place the fruit in a medium saucepan with the remaining ingredients, making sure the vanilla bean pod is scraped and the pod and seeds are added to the mixture. Bring to a boil, then reduce the heat and allow mixture to simmer gently for 50 minutes to 1 hour. The fruit should be tender but not falling apart. Add more sugar or orange juice, to taste, if needed. Remove and discard the cinnamon stick and vanilla bean pod.
Refrigerate compote in its syrup overnight before serving. Serve compote chilled.

In today's tutorial, I have a recipe that everyone loves and is a worldwide sensation! It's the beloved waffles????
This recipe yields perfect waffles that are crispy on the outside and soft on the inside. And you will never believe how easy it is to make????
The ingredients are as follows -
Wet ingredients -
Milk 1 1/4 cups
Vinegar 5 tsp
Egg yolks 2 nos.
Refined oil ½ cup
Vanilla essence 1 tsp
Powdered sugar 2 tbsp
Dry ingredients -
Flour 1½ cup
Baking powder 1 tbsp
Salt ½ tsp
Egg whites 2 nos.
Make these insanely easy waffles, top them off with whatever your heart desires, and satisfy your sweet tooth!????
