How To make Buttermilk Pecan Pralines (Cook 'Em Horns)
3 c Sugar
1 t Baking Soda
1 Pinch of Salt
1 c Buttermilk
3/4 c White Corn Syrup
2 T Butter
2 c Pecan Halves
In a large saucepan, (5 or 6 Quart size) combine sugar, baking soda, salt, buttermilk and corn syrup. Bring to a boil, stirring constantly. Reduce heat to medium-low, continue cooking until mixture becomes caramel-colored and reaches soft ball stage (238 degrees). Remove from heat, add butter and pecan halves. Beat until thick enough to drop from a spoon onto waxed paper. If mixture becomes too hard, return to heat and add small amount of water. Stir until smooth. Yield: 44 to 48 Pralines. *** Variation *** Reduce sugar to 2 cups. Omit corn syrup. Increase butter to 3/4 cup, add 1 teaspoon vanilla. Include butter in cooking stage. Add vanilla with pecans. Mama Sue makes HOLIDAY DROP COOKIES | Last minute cookie for Christmas | Southern dessert
A friend from high school, Joyce Genry, shared this recipe with me. It is one that her sweet mother, Mrs. Christine Bearden, baked each year. I couldn't wait to make it and share it with you. Joyce says it is very important for you to refrigerate the dough for at least 24 hrs. before baking. My husband ate so many of these until I was afraid he would be sick. I plan to package some and give them to friends for a little Merry Christmas surprise. Hope you will try them.
Thanks for following! And remember to be salt and light! - Sue

MAKE AHEAD HOMEMADE CINNAMON ROLLS! | EVENING TO MORNING WITH A MOM
Hey family!! In today's evening to morning video, I'm baking up some cinnamon rolls for breakfast the next morning!
Homemade Cinnamon Rolls Recipe:
Dough:
First Bowl:
1/4 cup warm water
1 package active dry yeast
1 tsp sugar
Mix these together and put to the side.
Next, in a small pot mix:
3/4 cup milk
1/3 cup butter
1/3 cup sugar
1/2 tsp salt
heat on medium/low until butter has melted and the mixture is just warm. If it gets too hot let it cool down to warm before mixing with other ingredients.
In a large bowl add 2 cups of all-purpose flour. Add the milk mixture and the yeast mixture. Begin mixing and add in two eggs. Add more flour 1/2 a cup at a time until the dough is formed and pulling from the sides of the bowl.
Remove from bowl and knead dough for a few minutes. Spray bowl with cooking spray and add dough back in. Cover with a dry towel and let rise for one hour.
Filling:
1/2 cup softened butter
1 cup brown sugar
2 TB cinnamon
Mix brown sugar and cinnamon in a small bowl.
When dough is finished with first rise roll out on a floured surface. Shape into a 13 X 15 rectangle. Spread softened butter on top, then sprinkle on the brown sugar and cinnamon mixture. Roll the dough beginning on the longer side. Cut into 16 rolls. Place in a greased pan, cover, and let rise 30-60 minutes.
Bake at 350 for 20-25 minutres.
Icing:
3/4 cup powdered sugar
1-3 TB heavy cream
Mix in a small bowl. If it's too thick add a little more cream.
Pour over cooled rolls.
