How To make Buttermilk Coffeecake
CAKE:
1 c Sugar
1/4 c Corn-oil margarine
1/2 c Liquid egg substitute
3/4 c Buttermilk
1 tb Vanilla extract
2 c Unbleached all-purpose flour
1 ts Baking powder
1 ts Baking soda
1/2 ts Salt
TOPPING:
1/3 c Sugar
1 ts Ground cinnamon
1/4 ts Pecans; chopped and toasted
Preheat oven to 350~F. Spray a 10-inch tube pan with nonstick vegetable coating; set aside. In large mixing bowl, cream sugar and margarine together. Beat in egg substitute, buttermilk and vanilla. In separate medium mixing bowl, combine flour, baking powder, baking soda and salt. Add to wet ingredients, and mix well. In small bowl, combine topping ingredients. Pour half the batter into the prepared pan and sprinkle with half the toppings; repeat layer. Bake in preheated oven 45 minutes or until toothpick inserted in center comes out clean. Cool in pan 10 minutes before serving. -----

Buttermilk Streusel Coffee Cake
In a bowl mix:
1 C. Packed Light Brown Sugar
1/2 C. Granulated Sugar
2 1/2 C. Unbleached All-Purpose Flour
1 t. Salt
1/4 t. Ground Nutmeg
3/4 C. (1 1/2 Sticks) Unsalted melted Butter; cooled
~Reserve 1 Packed Cup of the above mixture~
To that reserved Cup add 1 t. Ground Cinnamon
(This is the Streusel Topping)
To the remaining mixture left in the bowl add:
1 t. Baking Powder
1 t. Baking Soda
1 Large Egg at Room Temperature
1 C. Buttermilk
Bake @350 degrees in an 8x10 pan 30-35 minutes or until tester comes out clean. Makes 9 servings.

Cowboy coffee cake is a delicious and hearty dessert that is a classic made with a rich and moist cinnamon-infused batter, then topped with a decadent streusel topping. This cowboy coffee cake is the perfect treat to enjoy with a hot cup of coffee.
2 1/2 cups AP Flour
1/2 tsp. Salt
2 cups Brown Sugar
2/3 Shortening
2 tsp. Baking Powder
1/2 tsp. Baking Soda
1/2 tsp. Cinnamon
1/2 tsp. Nutmeg
1 cup Buttermilk
2 Eggs ( Beaten)
Let's Bake a Buttermilk Coffee Cake
Norann demonstrates baking a family favorite, Buttermilk Coffee Cake. Here's the recipe:
Combine and mix well:
2 ¼ cups flour
½ tsp salt
½ tsp cinnamon
1 cup brown sugar
¾ cup oil
Remove ¾ cup of the above mixture, place in separate bowl, and stir in 1 tsp cinnamon. Reserve this for the crumble.
Into the remaining mixture, add:
1 tsp baking soda
1 tsp baking power
1 egg
1 cup buttermilk (full cream milk plus 1 Tbsp vinegar – fine to let stand until curdled, but not nec.)
Blend until smooth – use a whisk, or an electric beater/mixer.
Pour batter into greased pan. A rectangular pan works well.
Sprinkle the crumble on top of the batter.
Preheat oven to 180C / 350F and bake until done (approx. 20-25 mins). Cake should be lightly brown and spring back at a gentle touch when done.
Serving suggestion: warm with sour cream or yogurt, or butter. Excellent breakfast treat. Enjoy!

COFFEE CAKE - BUTTERMILK CRUMBLE - A HOW TO
Hello and Welcome
Coffee Cake Recipe:
•1 Tablespoon flour, for coating the pan
•2 cups all-purpose flour
•1 cup + 2 Tablespoons granulated sugar
•1 teaspoon salt
•10 Tablespoons (1 and 1/4 stick) unsalted butter, firm and cold
•1 teaspoon baking powder
•1/2 teaspoon baking soda
•3/4 cup buttermilk, at room temperature1
•1 large egg, at room temperature2
•2 teaspoons vanilla extract
•2/3 cup packed light or dark brown sugar
•2 teaspoons ground cinnamon
Topping Recipe:
•1/2 cup brown sugar
•1/4 cup sifted all-purpose flour
•1/4 cup butter, room temperature
•1 teaspoon cinnamon
(walnuts optional)
Directions:
Preheat oven to 350F. Generously spray a pan3 with cooking spray or grease with butter. Sprinkle the bottom of the pan with 1 Tablespoon of flour and tap out the excess.
Whisk the flour, sugar, and salt together in a large mixing bowl until combined. Cut in the butter in very small pieces using a pastry blender or mix with a fork until the mixture resembles coarse crumbs. Set aside 1 cup of the flour mixture.
Mix the baking powder and baking soda into the remaining flour mixture. Add the room temperature buttermilk, egg, and vanilla - you may want to do this with a mixer. The batter is very, very thick. Vigorously mix everything together until the batter is smooth, fluffy, and resembles frosting - about 2 full minutes. Spoon the batter into the prepared springform pan, smoothing the top.
Add the brown sugar and cinnamon to the reserved flour mixture. Toss with a fork until well blended. Pressingly topping mix in bottom of pan lightly so they stick. Bake the cake until the center is firm and a toothpick inserted in the center comes out clean - 50-58 minutes. Cool for 10 minutes allow cake to cool completely before serving (about 2 hours).
