How To make Buttermilk Apple Muffins
1 c Brown sugar
1/3 c Oil
1 Egg, beaten
1 ts Vanilla
1 1/2 c All purp flour
1/2 ts Baking soda
1/4 ts Salt
1 c Apples, peel, chp
1/2 c Buttermilk
1/4 c Chopped walnuts
1/2 ts Cinnamon
Preheat oven 325. Place paper liners in muffin tins. Blend 3/4 c brown sugar, oil, egg, and vanilla in lg bowl. Add flour, baking soda and salt. Add apple and buttermilk and mix thoroughly. Divid among tins. Combine remaining 1/4 c brown sugar, walnuts, and cinnamon in sm bowl. Sprinkle over batter. Bake until muffins are brown and test done, 30-35 mins. Honey Bran Buttermilk Muffin Recipe

Wake up to these Honey Bran Buttermilk Muffins and start your day off right! This easy breakfast muffin recipe is great anytime.
Ingredients:
1 cup (250 mL) bran
1 cup (250 mL) buttermilk
⅓ cup (75 mL) butter
½ cup (125 mL) brown sugar
2 Tbsp (30 mL) honey
1 egg
1 cup (250 mL) all purpose flour
2 tsp (10 mL) baking powder
½ tsp (2 mL) baking soda
1 tsp (5 mL) salt
Method:
Pre-heat oven to 375ºF
Soak bran in buttermilk.
Cream together butter and sugar, then beat in honey and egg.
Mix in the bran that's been soaking in the buttermilk.
Mix together the dry ingredients: flour, baking soda, baking powder, and salt.
Add the dry ingredients to the wet - and mix just until moist.
Don't over mix!
Bake for 15 - 20 minutes.
Makes 6 jumbo muffins.

Cinnamon Buttermilk Muffin Recipe
Looking for a tasty weekday breakfast idea? Or something to send with the kids for lunch?
Ingredients:
For the muffins:
½ cup unsalted butter, at room temperature
⅔ cup sugar
1 egg
1½ cups all purpose flour
1½ tsp baking powder
½ tsp. baking soda
½ tsp salt
½ tsp freshly grated nutmeg
½ cup buttermilk
1½ tsp vanilla extract
For the topping:
⅔ cup sugar
1 Tbsp ground cinnamon
6 Tbsp. (¾ stick) unsalted butter, melted
Method:
Preheat oven to 350°F.
Cream the butter and sugar; add the egg and beat well until smooth.
In another bowl, combine flour, baking powder, baking soda, salt and nutmeg.
Add to the butter mixture in 2 additions, alternating with the buttermilk and vanilla.
Stir just until moist - don't over mix.
Bake 20-25 minutes or until the muffins are golden, and a toothpick inserted into the centre of a muffin comes out clean.
Transfer the pan to a wire rack and let cool for 5 minutes.
Topping: In a small shallow bowl, stir together the sugar and cinnamon; with the melted butter in another small bowl.
Dip the muffin top first into the melted butter, then dip in the cinnamon-sugar mixture, coating it evenly.

Apple Muffins with Buttermilk
Here are some fresh and fruity muffins for the early spring time!
You need:
2 apples
150g + 2 tablespoons sugar
1 teaspoon cinnamon
280g flour
1 teaspoon baking soda
pinch of salt
250ml buttermilk
1 egg
100g butter
vanilla extract
Bake with 180° Celsius for 20-25 minutes.
