Easy Smoked Salmon Frittata - Weekend Breakfast & Brunch Recipe!

One of my favorite weekend breakfast dishes! This smoked salmon frittata with goat cheese, wilted spinach and avocado is my go-to when I want a fancy but easy brunch! It’s loaded with tons of flaky smoked salmon so you get lots of smoky seafood flavor with every bite. I love to top it off with creamy goat cheese, avocado, green onions and refreshing dill for even more flavor! Next time you need an easy breakfast idea, give this frittata recipe a try!
INGREDIENTS:
8 eggs
1/2 cup cream, (or whole milk)
salt/ground black pepper
1/2 tsp smoked paprika, optional
1 tbsp butter
1 large shallot, diced
5 ounce baby spinach
3 green onions, diced
1 small bunch fresh dill, chopped
1 pound hot smoked salmon
3 ounces goat cheese, crumbled
1 avocado, sliced
4 tbsp sour cream

Ingredients for this Poached Egg Recipe (serves two)
4 EGGS
2 Tbsp WHITE VINEGAR
2 cups SPINACH
½ cup FENNEL BULB thinly sliced
1 GREEN ONION chopped
3-4 oz SMOKED SALMON
1 TOMATO sliced
¼ tsp GARLIC minced
¼ tsp GINGER minced
¼ tsp LEMON ZEST minced
1 tsp LEMON JUICE
2 tsp OLIVE OIL
SALT and PEPPER to taste
And fancy-pants BREAD for toast
How to Make Poached Egg with Salmon and Greens
Firstly, make the dressing. In a bowl combine the lemon juice, olive oil, lemon zest, ginger, garlic, salt, and pepper and mix well.
Add in the spinach leaves, chopped onion, and thinly sliced fennel and toss with dressing.
On two plates, arrange 1 to 2oz of smoked salmon, and top with the greens. I like to serve toast as a side with this dish, but you can build the salmon and greens on toast if you prefer. Now your breakfast is mostly made, you just have to poach the eggs.
How to Poach Eggs
Fill a nonstick skillet almost to the top with water. You want the water between 1 and 2 inches deep.
Place the skillet on the stovetop and add in the vinegar and stir.
Now heat the water until it begins to form bubbles on the bottom, almost to a simmer.
Crack your eggs into a smaller cup, and gently add them to the water.
Cover and poach eggs for about 3 minutes, or a little more or less depending on how runny you like the yolk.
With a slotted spoon, loosen the eggs from the skillet and remove from the water.
Set eggs a paper towel to drain. And that’s how to poach an egg!
Now to finish your fancy breakfast--or brunch--top the salmon and greens with your poached eggs and that’s it! Garnish with a sprinkle of paprika or black pepper or chopped green onion and serve hot.

Doughnuts recipe (about 12-14 doughnuts)
1 tbsp of dry yeast
180 ml of warm milk
2.5 tbsp of melted butter
4 tbsp of sugar
2 cups of flour
2 eggs + 1 yoke
2 tbsp of oil
1/2 tsp of salt
1 tsp of vanilla (or orange zest)
