Brownie Bottom Cheesecake

Ingredients
Brownies:
Nonstick baking spray
3/4 cups all-purpose flour
2 tablespoons unsweetened cocoa powder
1/4 teaspoons fine salt
1 stick (8 tablespoons) unsalted butter
2 ounces semisweet or bittersweet chocolate, chopped
1 cup sugar
2 large eggs, slightly beaten
Cheesecake:
16 ounces cream cheese, at room temperature
2/3 cup sugar
2/3 cup sour cream
3 large eggs, slightly beaten
1 teaspoon vanilla extract
Chocolate syrup, for garnish
Whipped cream, for garnish
Directions
Special equipment: a 10-inch springform pan
For the brownies: Preheat the oven to 350 degrees F. Spray a 10-inch springform pan with nonstick baking spray.
Whisk together the flour, cocoa powder and salt in a medium bowl. Melt the butter and chocolate in a medium saucepan over medium heat, stirring frequently, until completely melted, then let cool for 10 minutes. Stir in the sugar and eggs. Add the flour mixture, and stir to combine. Pour brownie batter into the prepared pan and tap the pan gently to ensure the batter is even. Bake until the top is set and the edges start to pull away from the sides of the pan, about 30 minutes. Remove from the oven and let cool completely on a baking rack.
For the cheesecake: Meanwhile, beat the cream cheese with an electric mixer until smooth. Add the sugar and beat until light and fluffy, about 2 minutes. Add the sour cream and mix until just incorporated. Stir in the eggs and vanilla extract by hand, one by one, taking care not to overmix or your cheesecake will turn into a souffle.
Wrap the bottom of the pan and up the sides with foil and place in a roasting pan. Pour the cheesecake batter on top of the brownie layer and spread it evenly on top. Fill the roasting pan with water until it reaches halfway up the side of the springform pan. Bake until the center is jiggly but the surface is set, about 1 hour. Turn off the oven and leave the cheesecake inside for 30 minutes.
Remove the cheesecake from the oven and run a sharp knife around the edges of the cake to release from the pan. Let rest on a baking rack until completely cool. Cover and refrigerate for 8 hours or up to overnight before serving.
Slice and garnish each slice with chocolate syrup and whipped cream.

Cookies & Cream Brownie Cheesecake Bars
Here is what you'll need!
Cookies & Cream Brownie Cheesecake Bars
Serves 10-12
INGREDIENTS
1 box brownie mix, prepared according to package instructions
24 ounces cream cheese, softened
¾ cup sugar
2 eggs, beaten
1 tablespoon vanilla extract
36 chocolate sandwich cookies
PREPARATION
Preheat oven to 325°F/165°C and grease a 9x13 baking pan.
Prepare the brownie mix in a bowl.
In a separate bowl, mix together the cream cheese and the sugar until there are no lumps.
Add the egg and vanilla, stirring until evenly combined.
Spread the brownie batter in an even layer on the bottom of the pan.
Place 24 of the sandwich cookies in a single layer on top of the brownie batter. To fill in the edges, cut 6 of the cookies in half and nudge those in.
Pour the cheesecake batter on top, spreading it evenly over the cookies.
Crush the remaining 6 cookies and sprinkle on top of the cheesecake batter.
Bake for about 45 minutes, until the edges are slightly golden brown and the middle is slightly jiggly.
Cool and chill for at least 2 hours.
Slice, then serve!

These cheesecake brownies are the perfect combination of two of the most popular desserts. At the bottom a layer of rich brownie, at the top a layer of delicious cheesecake and on top a touch of brownie swirls. If you like fudgy brownies and you like cheesecake you are going to love these cheesecake brownies. Follow this easy recipe to learn how to make this impressive dessert.

Ingredients:
For the brownie:
6oz (170g) Dark chocolate
1/2 cup (100g) White sugar
1/3 cup (67g) Brown sugar
2/3 cup (155g) Butter
1/4 cup (30g) Cocoa powder
3/4 cup (95g) Flour
1 teaspoon Baking powder
2 Eggs
1 egg yolk
1/4 teaspoon Salt
For the cheesecake:
1 cup (225g) Cream cheese, room temperature
1 Egg
1 teaspoon Vanilla extract
1/4 cup (50g) Sugar
Directions:
1. Preheat oven to 350F (180C). line a 8-inch (20cm) square baking pan with parchment paper. Set aside.
2. Place chopped chocolate and butter in a large heat proof bowl. Set the bowl over a double boiler and melt completely. Add both sugars and stir. Allow to cool slightly.
3. In a separate bowl sift flour, cocoa powder, baking powder and salt.
4. To the chocolate mixture add eggs, one at the time and whisk until combined.
5. Add flour mixture to the chocolate mixture and stir until combined.
6. Pour the batter into prepared pan and spread evenly. Reserve 1/2 cup for later.
7. In a bowl whisk cream cheese, sugar, egg and vanilla extract.
8. Pour cream cheese mixture over the brownie layer. Take your reserved ½ cup brownie batter and drop over cheesecake. Use a knife to gently swirl the filling, creating a marbled effect.
9. Bake for 25-30 minutes, until center is set and a toothpick inserted in the center comes out mostly clean with a few fudgy crumbs.
10. Let cool completely, cut into squares and serve.
Notes:
• You also can melt chocolate and butter in the microwave in a 20 second pulses.
• To make the brownie batter more “swirlble” add 2 tablespoons of hot water to the remaining batter and stir until combined and smooth, then drop over the cheesecake.

2 (8 oz.) blocks cream cheese, softened
1/2 c. sugar
2 large eggs
2 tbsp. sour cream
1 tsp. pure vanilla extract
1 c. chocolate chips
1 tbsp. all-purpose flour
1/4 c. chocolate chips, melted
1/4 c. Chocolate shavings (optional)
DIRECTIONS
1. Preheat oven to 350º and grease an 8” or 9 springform pan with cooking spray. Prepare brownie batter according to package instructions and pour into greased pan. Bake until brownie is set and a toothpick comes out clean, about 45 minutes. Let cool. Reduce oven to 325°.
2. In a large bowl using a hand mixer, combine cream cheese and sugar. Beat until light and fluffy. Add eggs, one at a time, mixing well between each addition. Add sour cream and vanilla and beat until evenly combined.
3. In a small bowl, mix together chocolate chips and flour. Fold into cheesecake mixture.
4. Pour cheesecake mixture over brownie crust. Wrap bottom of pan in aluminum foil and place on a roasting pan. Transfer to oven.
5. Pour in enough boiling water to come up halfway in the roasting pan. Bake until center of cheesecake only slightly jiggles, about 45 minutes. Turn off heat, prop open oven door, and let cheesecake cool in oven, 1 hour, then remove aluminum foil and refrigerate cheesecake in pan until firm, at least 5 hours and up to overnight.

Chocolate Fudge Brownie Cheesecake
Here is what you'll need!
CHOCOLATE FUDGE BROWNIE CHEESECAKE
Servings: 10-12
INGREDIENTS
Cheesecake
1 box brownie mix, prepared according to package instructions
24 ounces cream cheese, softened
¾ cup sugar
3 eggs, beaten
2 teaspoons vanilla extract
Ganache
1 pound semi-sweet chocolate chips
2 cups heavy cream
PREPARATION
1. Preheat oven to 350˚F/180˚C.
2. Prepare the brownie batter and pour into greased springform pan. Bake until set, about 20-25 minutes.
3. Meanwhile, beat the cream cheese and sugar until incorporated. Add beaten eggs and vanilla, and beat again until smooth.
4. Remove brownies and lower oven temperature to 325˚F/165˚C.
5. Pour cheesecake batter over brownie bottom, and bake for 50 minutes until set and slightly jiggly.
6. Remove cheesecake and refrigerate for 4 hours, or overnight.
7. Heat or microwave whipping cream to just before boiling and pour over chocolate chips.
8. Stir continuously until the chocolate is melted and smooth.
9. Allow the ganache to sit for 10-15 minutes.
10. Transfer cheesecake to a baking pan with a wire rack.
11. In a circular motion starting from the inside out, pour the ganache glaze over the cheesecake making sure to cover all sides.
12. Allow ganache to cool and set for 30 minutes.
