Betty's Irresistible Black Bottom Pie
Betty demonstrates how to make her Irresistible Black Bottom Pie. This is a pie of Southern origin that has a dark chocolate cream pie layer topped with a rum-flavored custard. It is served in a pie crust and has whipped topping with chocolate curls on top. It is simply irresistible!
Irresistible Black Bottom Pie
8-inch or 9-inch baked pie shell or graham cracker crust
¼ cup cold water
2 teaspoons unflavored gelatin
3 eggs, separated
1 cup milk
½ cup sugar
¼ teaspoon salt
1 ½ squares unsweetened chocolate, melted and cooled
½ teaspoon vanilla extract
3 tablespoons rum (You may substitute rum flavoring, if you like.)
8 oz. carton of whipped topping (or ½ pint whipping cream, whipped)
unsweetened chocolate shavings or curls
Into ¼ cup cold water sprinkle 2 teaspoons unflavored gelatin. Stir until combined, and set aside. In a medium saucepan, stir together 3 egg yolks, 1 cup milk, ½ cup sugar, and ¼ teaspoon salt. Make into a custard by cooking and stirring over low heat, until it coats a spoon. Remove from heat, and stir in gelatin. Meanwhile, beat 3 egg whites until stiff. Divide the custard mixture in half. To one half add 1 ½ squares unsweetened chocolate, ½ teaspoon vanilla, and half of the egg white mixture. To the other half add 3 tablespoons rum and the remainder of the egg white mixture. Cool, and as mixtures begin to thicken, pour chocolate part into pie shell. Cover with rum-flavored custard. Top with a layer of whipped topping. Sprinkle with unsweetened chocolate shavings or curls. Return to refrigerator until the pie is set. Then, slice and serve the pie on nice serving plates. This is a gorgeous pie that is not only showy, but delicious! I hope you enjoy it! --Betty

Strawberry Balsamic Pie with Lattice Top

Recipe adapted from The Four and Twenty Blackbirds Pie Book:
1/4 c. + 3 Tbsp. granulated sugar
3 lbs (3 pints or 6-8 cups) fresh strawberries
2 Tbsp. Balsamic Vinegar
2 dashes Angostura bitters
3/4 c. brown sugar, packed
3 Tbsp. cornstarch
1/2 tsp. kosher salt
2 grinds of black pepper
425F for 20 min (bottom rack), then 375F for 40 min (middle rack)

Strawberry Pie
It is strawberry season in N.C.! My wife makes a strawberry pie from the crust up that is so delicious. Get out your mixing bowl, sauce pan, blender, and 9 inch pie pan and get ready!
Ingredients and directions for Whipped Cream Berry Patch Pie:
Need for Crust-
1 cup flour
3 Tablespoons sugar
pinch of salt
6 Tablespoons of softened butter (not melted)
Need for filling-
3lbs Strawberries
1/2 cup of water
3/4 cup of sugar
2 teaspoons of lemon juice
2 tablespoons of corn starch (heaping)
2/3 cup heavy whipping cream
2/3 cup cottage cheese (small curd)
1/2 teaspoon of vanilla or almond extract
Making the crust-
Preheat oven to 450.
Combine 1 cup of flour, 3 tablespoons of sugar and a pinch of salt in a medium/large bowl. Cut your 6 tablespoons of softened butter. With a pastry press, mash the butter into the mixture until it looks like crumbs. Pour in to pie pan and smooth it around making the bottom slightly thicker than the sides. Bake for 450 for 8 min. Then let cool.
Making the filling-
Wash and hull strawberries.
Combine 2 cups of cut strawberries with 1/2 cup of water and 1/2 cup sugar and 2 teaspoons of lemon juice.
Heat to boiling
Simmer uncovered for 1 min.
Pour in to blender.
Add cornstarch and whir until smooth.
return mixture to saucepan and cook over medium heat until glaze thickens, boils, and becomes translucent.
Cool to room temperature.
Combine whipping cream, cottage cheese, 1/4 cup of sugar, and vanilla in the blender and blend until smooth.
Spread in bottom of baked cookie crust. Spoon 1 cup (about half of the glaze) over cheese layer.
Mound the remaining cut strawberries on the pie.
Cover with left over glaze.
Put in refrigerator to chill.

Strawberry Cobbler with Pie Crust ????????????????| Easy Homemade Dessert! ????????
Strawberry cobbler with pie crust is an easy and delicious old fashioned dessert that you and your family will love. Many easy cobbler recipes are dump cake style, so the crust is light and fluffy like a cake. Although those are definitely good, I really like the texture of pie crust, so I decided to create a southern style strawberry cobbler with pie crust recipe with dumplings, pieces of pie dough cooked inside of the fruit filling, not just either on the top or bottom of the cobbler. Many people would expect the dumplings to be soggy or rubbery, but they are the exact opposite. Instead, the dumplings are soft and plump, creating a delicious contrast with the crispy crust on top of the cobbler.
In addition to the texture, the flavor of this strawberry cobbler is delicious as well, the lemon in the background really making the berry flavor pop. This dessert has just the right amount of sugar, so it isn't too sweet; in fact, it is perfect either on its own or with a scoop of ice cream--or two, or three...
Best of all, this cobbler is super easy since it uses frozen strawberries, so there is no prep work involved. I always use homemade pie crust, but you could definitely use Pillsbury or any other storebought dough as well.
Like I said, this strawberry cobbler with pie crust is absolutely amazing. In addition to the flavors and textures, the color is amazing, too: the filling turns a vibrant, eye-catching red, one of the deepest, brightest shades of red I have ever seen in all my life.
With that said, you should definitely give this recipe a try. Besides it has summertime fruit and is a beautiful shade of red, it would be perfect for the 4th of July, Canada Day, Memorial Day, Labor Day, a barbecue, or since it is made with frozen strawberries, even Christmas.
