Recipe:
1-2 pounds boneless skinless chicken breast
1 tablespoon all-purpose flour
1 tablespoon vegetable oil
1 can (16 oz) pineapple chunks
1.5 teaspoon cornstarch
1 tablespoon honey
2 tablespoon soy sauce or coconut aminosaminos
1/2 teaspoon pepper
2-3 cups cooked rice

I think this might be my new favorite chicken recipe. Sweet, savory, salty, so good!!
For the marinade, combine 1 cup each: ketchup, soy sauce, pineapple juice, brown sugar and 2 tbsp ginger and garlic. Got everything from @marianosmarket , of course.

Aloha Chicken and Rice Casserole
Our aloha rice chicken casserole is simple to put together and delicious. Made with a combination of rice, chicken, onion, garlic, salt, pepper, red bell pepper, pineapple, chicken stock, brown sugar, and soy sauce, the taste is simply out of this world. If there are any leftovers, which there probably won't be, you can always pack it for lunch the next day. Believe me your family, dinner guests, and friends will love this rice dish and beg for the recipe.

Ingredients:
500 grams or 1 pound of boneless skinless chicken breasts cut into cubes
1 small chopped onion
Preheat you oven to 425 F or 220 C.
3 cloves of chopped garlic
salt and pepper to taste
1 small bell pepper, chopped
400 ml can of of pineapple tidbits, undrained.
1 1/2 cups of uncooked rice
For the sauce:
3/4 cup of chicken stock
1/2 cup of brown sugar
1/2 cup of low sodium soy sauce
1 green onion chopped for garnish
Method:
Add the onion and garlic to a pan over medium high heat. Saute until fragrant making sure not to burn the garlic.
Place the chicken in and season with salt and pepper. Stir until well coated and fry until cooked through but not brown.
Set it aside in a casserole dish sprayed with cooking spray.
Add in the red bell peppers and pineapple.
Combine the sugar, and soy sauce with the chicken stock and whisk until well combined.
Place the rice over the chicken mixture and pour the sauce over it. Gently toss until well combined.
Cover with aluminum foil and place on a baking tray lined with aluminum foil.
Place in the oven and bake for 45 to 50 minutes.
Garnish with green onions, serve, and enjoy your aloha rice and chicken casserole.

WHOLE CHICKEN HAMONADO (Sarap to the bones!) (Whole Chicken Fry in Filipino Style)
Chicken Hamonado is a Filipino dish made by cooking a whole chicken with pineapple juice, soy source, black pepper, bay leaf , searing, brown sugar, oyster sauce, pineapple chunks, minced onion, minced garlic and salt. Chicken Hamonado or chicken in pineapple sauce, is very easy to make and scrumptious. The best part of this recipe is you don’t have to cook this in oven. You just need a deep wok or pan with lid ( a little bit of patience) and it’s good to go! #chickenhamonado #filipinorecipe

INGREDIENTS:
✔️1 kilo whole chicken
✔️2 cups pineapple juice (unsweetened)
✔️3 tablespoon soy sauce
✔️1/2 teaspoon black pepper
✔️1 large onion (chopped)
✔️4 cloves garlic (minced)
✔️2 tablespoon oyster sauce
✔️1 tablespoon brown sugar
✔️salt to taste
✔️5 to 6 pineapple slices (or chunks)
✔️oil for searing
PROCEDURE
1. Combine pineapple juice, soy sauce and black pepper. Mix well. Pour over the chicken. Add bay leaf. Marinate for at least 6 hours or overnight.
2. After marinating, drain from the marinade. Then sear all sides of the chicken until brown. Heat 2 tbsp. oil in pan and sear the chicken. Turn to cook each side. After browning, set aside.
3. In the same pan, saute’ onion and garlic. then put back the chicken. Add the reserved marinade. Add oyster sauce and brown sugar. Simmer for 15 minutes in low heat.
4. After 15 minutes, turn the chicken to cook the other side. Simmer for another 10 minutes low heat.
5. After 10 minutes, add the pineapple slices and its juice. Then start basting the chicken (scoop some sauce and pour over the chicken as you cook). Cook the chicken until the sauce thickens (medium heat).
6. Once the sauce is reduced, add salt to taste. Simmer for a minute then remove from heat.
