How To make Breakfast Potato Casserole
Ingredients

ounces
potoatoes, frozen hash brown one package
1/3
cup
onion, chopped
1/4
cup
green bell pepper, chopped
8
slices
bacon, crisply cooked and crumbled
8
ounces
whole kernel corn, canned (one can), drained
1/2
cup
cheddar cheese, shredded
1
cup
milk
5
large
eggs, beaten
1/2
teaspoon
salt
1
dash
cayenne pepper, red pepper, ground
1
dash
paprika
Directions:
*substitute: 3 c Frozen shredded hash brown Potatoes. (do not thaw.)
Heat oven to 350 degrees F.
Cover potatoes with water and drain as directed on package except omit salt.
Spread potatoes in ungreased rectangular baking dish, 12 X 7-1/2 X 2 inches. Top with onion, bell pepper, bacon, corn and cheese.
Mix remaining ingredients except paprika. Pour over cheese. Sprinkle with paprika.
Bake 35 to 40 minutes or until knife inserted in center comes out clean.
6 SERVINGS; 350 CALORIES PER SERVING.

Make Your Own: Cracker Barrel Hashbrown Casserole
Learn how to make hashbrown casserole just like Cracker Barrel's!! This is the only recipe there is that uses the same ingredients Cracker Barrel does even though there are several copycat recipes online. First, Cracker Barrel uses colby cheese, not cheddar and second, they don't use sour cream in their hash brown casserole. Those recipes may be good in their own right, but they are not as close to the real deal as this is. These taste exactly like what you get served at the restaurant, especially when you let them sit for a bit like the restaurant does.
I got this recipe from a friend of mine who was a cook at Cracker Barrel for several years. They make it in big batches but this is cut down to go into a 9x13 pan which will serve 6-8 people.
What you'll need:
2 lbs frozen hash brown potatoes, thawed
1 (10.75oz) can Campbell's condensed cream of chicken soup
1/2 medium yellow onion, diced or chopped fine
1/4 cup margarine, melted
2 cups (8 oz) colby cheese, shredded or diced fine in a food processor
1/2 tsp salt
1/2 tsp black pepper
Combine everything except the hash browns in a large bowl. Add in the thawed hash brown potatoes and mix well. Put into a 9x13 baking pan and bake in a preheated 350*F oven for 45-50 minutes or until golden brown and bubbly. Enjoy!!

Ingredients
6 to 8 medium russet potatoes
Salt and ground pepper
Nonstick cooking spray
24 large eggs
Directions
Preheat the oven to 400 degrees F.
Bake the potatoes until tender, 45 minutes to 1 hour. Allow to cool, and then peel and grate them. Season well with salt and pepper.
Adjust the oven temperature to 450 degrees F. Spray two 12-hole muffin pans generously with cooking spray. Scoop 3 to 4 tablespoons of grated potato into each muffin hole. Use your fingers to gently press down the sides and bottom in each muffin hole to make a nest. Spray again with cooking spray. Then bake for 15 to 20 minutes. Watch and make sure they do not burn.
Allow the nests to cool and lower the oven temperature to 400 degrees F. Then crack an egg into each nest. Sprinkle with salt and pepper and bake until the whites are set, about 15 minutes.

Everything you love about breakfast in one easy and delicious casserole. Perfect for Thanksgiving and Christmas morning or whenever you have company over. Pop it in the oven when you get up and you are good to go.

1 lb bulk sage pork sausage
1 cup green bell pepper, chopped
1 cup red bell pepper, chopped
10 eggs
2 cups whole milk
¼ tsp ground black pepper
½ tsp garlic powder
½ tsp salt
3 cups frozen country style hash browns
1 cup French’s crispy fried onions
8 oz cheddar cheese
hot sauce, optional
Bake at 350 F or 177 C uncovered for 40 minutes. Then cover with foil and bake 10 more minutes.
*Be sure to let the casserole sit out at least 20-30 minutes before baking because the sudden changes in temperature may cause the dish to shatter or break.

INGREDIENTS
30 oz bag of frozen shredded hashbrowns
10.5 oz can of condensed cream of chicken
8 oz sour cream
12 fl oz can of evaporated milk
1 large egg
6 Tbsp unsalted butter
8 oz Colby Jack cheese
1 tsp granulated onion powder
1 tsp granulated garlic powder
1/2 tsp smoked paprika
1/2 tsp salt
1/4 tsp black pepper
9x13 baking dish
garnish with fresh chives and parsley
