Today I am making a cheesy chicken spaghetti that utilizes ingredients right from the pantry. This is a great recipe idea to feed a family. This is week two of self quarantine cooking and what is on the menu today.

INGREDIENTS
1 1/2 lbs (680 g) seasoned cooked chicken (chopped or shredded)
1 lb (454 g) spaghetti pasta
2 Tbsp (28 g) unsalted butter
8 oz (227 g) American processed cheese
8 oz (227 g) cream cheese
10.5 oz (298 g) can condensed cream of chicken (or mushroom)
10 oz (283 g) can Rotel (chopped tomatoes and green chiles)
1 small onion (115 g) (diced)
1 small bell pepper (130 g) (diced)
1 celery rib (50 g) (diced)
8 fl oz (237 ml) reserved pasta water
8 oz (227 g) cheddar cheese (shredded)

How TO Make Chicken Spaghetti

Breakfast Pasta
This is a dish that I was thinking about all week long, and I finally put it together. My Breakfast Pasta consist of flour tortillas cut into strips with a pizza cutter, chorizo and eggs, cheese grits, bacon, Sniffin Griffins BBQ OG Barbecue Sauce. All my seasoning for this dish came from the chorizo, salted butter and the bacon. No additional salt added.

Cheesy Chicken And Broccoli Pasta
Recipe:
Yields: 4 Servings
Ingredients:
2 Tbsp. olive oil
2 chicken breasts, cut into 1 inch pieces
Salt and pepper to taste
1/2 cup diced yellow onion (about half an onion)
2 cloves garlic, minced (about 1 Tbsp.)
2 cups chicken broth
3 cups water
1 16oz bag of pasta shells
4 cups broccoli (or one head of broccoli)
1/2 tsp cayenne powder
1/4 tsp nutmeg
1 cup milk
2 cups shredded cheddar cheese
Directions:
Heat olive oil on medium heat in a large pot. Add chicken breasts, season with salt and pepper, and allow the chicken to brown on one side. Flip chicken, then add onions and garlic as the second side browns. Once the chicken has browned on both sides, add chicken broth, water, and pasta to the pot. Stir all ingredients, cover the pot with a lid, and bring to a boil. When it begins to boil, uncover and stir. Bring the heat to low, stir, then cover and let simmer for 20 minutes. After 20 minutes has passed, uncover and add in the broccoli. Stir continually as the broccoli steams until the rest of the liquid evaporates. Add milk and cheddar cheese and stir until the cheese melts and you have a smooth cheese sauce. Add salt and pepper (to taste), cayenne, and nutmeg. Stir once more, then you’re ready to serve. Enjoy! Here is what you'll need!
CREAMY CHICKEN BACON PESTO PASTA
Servings: 4
INGREDIENTS
6 bacon strips
2 chicken breasts
2 teaspoons salt
1 teaspoon pepper
1 teaspoon garlic powder
2 onions, sliced
4 garlic cloves
5 ounces spinach
5 cups milk
1 pound fettuccine
½ cup pesto
1 cup parmesan
Garnish
Parmesan
Fresh parsley
PREPARATION
1. In a large pot or dutch oven over medium-high heat, cook the bacon until crispy.
2. Add chicken and season with salt, pepper, and garlic powder. Cook until no pink is showing, then remove the chicken.
3. Add onion and garlic and cook until softened.
4. When onions are caramelized, add spinach and cook until wilted
5. Add milk and bring to boil.
6. Add fettuccine into boiling mixture and cover.
7. Cook fettuccine on medium heat until milk thickens and pasta is cooked (about 7 minutes).
8. Mix back in the chicken. Stir in the pesto and parmesan.
9. Garnish with parsley and additional parmesan
10. Enjoy!

Ingredients
100 g leftover spaghetti
1 yellow onion
1 slice cooked ham, cut into small pieces
1 tbsp milk
2 tbsp grated parmesan cheese
2 eggs
2 tsp cooking oil
2 tsp butter
1 tbsp chopped parsley
salt and butter to taste
