diced 1 cup celery :
diced 3 sprigs rosemary -- 1-1/2" long 5 cloves garlic 1/2 ounce dried porcini mushrooms 1 cup warm water 1 1/4 cups white wine 2 quarts veal stock STEP ONE: Prepare Porcini Mushrooms
Reconstitute porcini mushrooms in 1 cup warm water, then drain:
reserving liquid--and dice fine. STEP TWO: Season veal shank with salt and pepper. Dust with flour. In an ovenproof pan, brown veal in hot olive oil until golden. Remove veal from pan. Add next 5 ingredients to pan, saute until browned. Add reserved mushroom liquid and wine to vegetables and reduce liquid by one-half. Add mushrooms and veal stock. Bring to a boil. Cover with foil and bake in a preheated 375-degree F oven approximately 2 hours. Remove meat from juice. Keep warm. Reduce juice by one- half and pour over veal. Serve with risotto on the side.

Ingredients: 5.5 lb. veal shanks, bone in 1 lb. shallots 2-3 carrots 3 garlic cloves 1 tsp. thyme 1 tsp. rosemary ⅓ cup brandy 1 ⅓ cups beef stock Salt and ground black pepper to taste Olive oil
Directions:
Heat olive oil in MAGEFESA pressure cooker. When the oil is hot enough, brown veal shank -previously seasoned- until well browned on both sides; remove and set aside. Stir in garlic, shallots and carrots and sauté for a couple of minutes until they turn brown. Transfer veal shanks back to pot and place them vertically if possible; add the rosemary, thyme and pour brandy over it. Reduce over medium-high heat for a couple of minutes until alcohol evaporates and pour in the beef stock. Close lid securely, select position II, bring to pressure over high heat and wait until pressure regulating valve begins to release steam. Reduce heat to medium-low and cook for 45-50 minutes (Practika Plus, Qualix and Athenas models), 55-60 minutes (Nova and Favorit models). Once cooking time has elapsed, remove pressure cooker from heat and release steam using the natural pressure release method. Open the unit cautiously following the instructions manual. Check for doneness and allow shanks to rest 20 minutes before serving.
