How To make Nicholas' Baked Lamb Shanks
2 LAMB SHANKS
8 oz TOMATO SAUCE
1/2 LARGE YELLOW ONION,CHOPPED
1/3 c PARSLEY,CHOPPED FINE
1/2 tb OREGANO,FINE GROUND
1 SALT TO TASTE
1 PEPPER TO TASTE
Remove all visible fat from lamb shanks. Salt & pepper lamb shanks,sprinkle with oregano, and place in a large covered baking dish. Mix together tomato sauce,onion,parsley,oregano,salt,peppper & pour over lamb shanks. Cover & bake in preheated oven for 20 min. at 400 F. then lower heat to 350 F. for 1 hour & 25 min. Skim any visible fat from sauce, or refrigerate overnight

Cooking with AZ ep1 - lamb shanks
welcome to a new series I'm calling cooking with Az!!!
In this ep I whip up some slow cooked Lamb shanks over the fire for #campforcorona backyard camping!!
Ingredients for dinner
2 lamb shanks
500ml of chicken or beef stock
2 tablespoons of thyme
5 garlic cloves chopped or crushed
2 brown onions chopped however you prefer
4 potatoes quartered
2 carrots quarters
250ml red wine
3 tablespoons gravy powder of your choice
method
brown lamb shanks for a couple minutes
add onion, stock, wine, herbs, gravy powder
into camp oven
cook for 1-1.5hr
then add in carrots and potatoes
cook for extra 1-1.5hr
plate up and enjoy with you favourite cold beverage!!

OMG! Italian Style Rich lamb stew with honey and caramelised onion
The best stew you will ever taste. This slow braising method fuses the ingredients together leaving you with an incredible tender, moist and rich flavoured meat.
Lamb is becoming a more fashionable red meat as it’s a healthier meat as it contains many vitamins, minerals and B12. Try and buy grass fed and it will also have the heart healthy omega 3 fatty acids.
But enough about health, this recipe is about taste. If you like those rich casserole stews, then look further, this is a complete meal cooked in one pot. The slow cooking process tenderises the meat and develops the flavour.
A complete meal because it has carrots, peas, potatoes all built in. The best part is that it will taste even better the next day, so make a big pot. It’s also easy to freeze for ready made meals when you’re short on time. I usually place them in glass storage containers and then microwave them or add a splash of water in a saucepan and reheat on very low heat.
For the wine, make sure you buy a full bodied wine, like a shiraz or cabernet sauvignon. Do not go crazy on the price but don’t skimp either, the quality of the wine will affect the sauce. It is a red wine sauce after all.
As an option, I like to serve it with a crusty toasted bread, rubbed with a clove of garlic for that extra flavour. This is of course optional. Sprinkle some freshy chopped parsley or you can even use the celery leaves to add colour and freshness before serving.

How To Cook Lamb Shank in a Camp Oven : [ SLOW COOKED ]
Bush cooking at it's best. I show how to cook lamb shank in a camp oven , makes such a delicious meal while your out camping.
I cook these lamb shanks in a camp oven, slow cooked over three hours.
It doesn't get much better than slow cooked lamb shanks in the camp oven with red wine and mash potato on the coals of the campfire.
Lamb shanks cooked at camp out in the bush taste amazing and when they are slow cook over 3 hours inside a cast iron camp oven, the meat of the lamb shanks just falls off the bone.
A slow bush camp cook up of anything cooked in the camp oven will make a very tasty meal.
Inside my cast iron camp oven with the slow cooked lamb shanks, i have added red onions, half a bottle of Cabernet Sauvignon red wine, chicken stock, garlic and a few other tasty additions.
With all of those ingredients mixed in with the slow cooked lamb shanks on a bed of mash potato, i served up a very nice meal out in the bush.
This is fine bush camp cooking at it's best.
