How To make Braised Beef with Brandy& Mustard
1 tb Olive oil
1 1/4 lb Bottom round steak, trimmed
- of fat and membrane 1/2 c Brandy
2 c Defatted beef stock
2 tb Coarse-grained mustard
2 tb Provence-style or Dijon
- mustard 1 Bay leaf
4 Shallots, peeled and thinly
- sliced 4 Sun dried tomatoes (not oil
- packed), cut into slivers 3 lg Garlic cloves, peeled and
- thinly sliced 6 Juniper berries
Freshly ground black pepper - to taste
Preheat oven to 325 degrees. In a Dutch oven or deep skillet, heat oil over medium heat. Add meat and brown on all sides. Transfer to a plate lined with paper towels and drain off all the fat in the pan. Return the pan to the heat and immediately add brandy, stirring to scrape up any browned bits in the bottom. Cook until the brandy is reduced to a syrupy glaze. Stir in stock, mustards, shallots, sun dried tomatoes, garlic, juniper berries and bay leaf and bring to a boil. Return meat to the pan, cover tightly and place in the oven. Bake, turning the meat every 30 minutes, for 1 1/2 to 2 hours, or until very tender. Remove bay leaf and season the sauce with pepper. Cut the meat into thin slices, arrange on platter and spoon the sauce over. Serves 4. Calories: 350 per serving; Protein: 38 grams; Fat: 8 grams; Carbohydrate: 14 grams; Sodium: 679 milligrams; Cholesterol: 90 milligrams.

Pork Chop Steak with Brandy Sauce
Heat the vegetable oil in an iron-cast skillet. Add the pork chop and cook for five minutes on each side.
Season it with salt.
For the dressing sauce, add butter to the same skillet where you cooked the steak. Add the brandy and cook for a few more minutes, until the sauce become thicker.
Add the dressing over the steak.
Serve warm.

A Creamy Brandy Fillet Steak at Riviera Meat Market - A BraaiBoyTV Recipe
# A **_kuier_** with some friends
**kuier** - The colloquial Afrikaans word for partying/socialising... it literally translates to visit.
I met the owners of Riviera Meatmarket at a social at their restaurant _1892 Sinkhuis_, which happens to be one of the oldest, still operational pubs/restaurants, in Pretoria. We got along like a house on fire and as one does after a few beers, decided we needed to meet up for a kuier/braai. Another beer or two later, and we decided to shoot an episode of BraaiBoy TV at their butchery... and as a bonus they would offer fillet on special for anyone that saw the episode... so if you're in the area, pop on over to them and get your hands on the cheapest fillet currently on offer in Pretoria.
# A tender beef fillet
A fillet is not a very hardworking muscle, and as such it's very tender when we cook it. The downside to that though is that it's also not as full of flavour as other cuts. A brisket for example comes from the chest area and from muscles that do a LOT of work... as a result they are much more suited to low-and-slow cooking methods (but are packed with flavour).
That doesn't mean I don't like a fillet, it's just that I would almost never do it using just olive oil, salt & pepper on the braai like I would a rump steak for example.
## Something special with a fillet on special
The easiest way to give a fillet some delicious flavour is to stuff it. In this episode I make a pocket in the one half and butterfly the other... both options work equally well, but you'll generally experience less loss of your filling when you create a pocket as the sides are still sealed.
Check out the video for a very easy to make creamy brandy sauce. Essentially just Onions, Mushrooms, Crème fraîche and of course a South African 'trademark: brandy.
