This ground beef and rice stuffed acorn squash is so delicious.I love the way the flavors seep seep into the flesh of the squash. The squash is soft and tender and flavorful
Ingredients
2 acorn squash
½ small red onion chopped
1 cup red,green,yellow bell peppers
I Lb ground beef 85/15
½ tsp red cayenne pepper
1 cup cooked rice
¼ cup breadcrumbs

Recipe: Stuffed Carnival Squash with Vegies and Ground Beef
Hello my friends
welcome back to my channel.
Today I am sharing with you a versatile and super easy fall recipe with winter squash, vegies of choice and meat of choice.
Products you will need :
4 Winter Squashes( could be Carnival, Acorn, Butternut... etc. )
2 Garlic Cloves
1 big size carrot or two small ones
1 bunch of fresh onion
mushrooms
meat of choice ( ground beef, sausage..)
The meat is optional you can sub with rice or quinoa if you want your meal to be fully vegetarian !!
If you are going to use ground beef I highly recement using the spice Cumin with it. It definitely elevates the flavor of the meat !!
How to :
Wash, cut and scoop out the seeds of your squash.
Drizzle olive oil, sprinkle with salt and black pepper and back for 45 min on 400F.
Sautéed your vegies and you can add more different ones if you want to the ones I am using.
Add the ground beef( meat of choice) to the veggies.
Scoop your filling into your roasted squash, put a slice of chees on top back for few min, so the chees is melted and enjoy !!

Turkey Sausage-stuffed Squash
Serves 4
INGREDIENTS
2 large acorn squash, halved and seeded
2 tablespoon olive oil
½ tablespoon garlic powder
½ tsp ground sage, divided
¾ lb turkey sausage links, casings removed
1 onion, finely chopped
½ cup finely chopped celery
4 oz mushrooms, chopped
1 apple, cored and chopped
1 cup panko crumbs
¼ cup grated Parmesan cheese
salt and pepper
2 eggs, beaten
PREPARATION
Preheat oven to 400°F (200°C).
Combine the olive oil, garlic, and 1/4 tsp sage. Brush the inside and outside of each squash with the garlic oil mix. Place the squash on a cookie sheet, cut side up, and roast for 50-60 minutes, or until fork-tender.
In a large skillet over medium heat, brown the sausage. When the sausage is browned, remove it from the pan and place on a paper towel-lined plate, set aside. To the skillet, add the onions, celery, and mushrooms and cook for 3 minutes. Add the apples and cook for another 2 minutes.
Return the sausage to the skillet then remove from heat. Season with 1/4 tsp sage, salt, and pepper. Stir in the panko and Parmesan. Add the egg and stir to combine.
Divide the stuffing evenly among the four squash halves. Return to the oven and bake for another 30 minutes.
