Beef Stew with Butternut Squash
In this episode of Dave's Kitchen (S1E8) we are making us some delicious beef stew. Beef stew with butternut squash is a simple and fast recipe. We make the dish with round tip steak, but you can use stewing beef or any cut of beef you wish. Just keep in mind that the better the cut of beef, the tenderer the meat will be. This is generally a rule of thumb when it comes to just about any meat. I also ensure that the meat is at room temperature before I start to work with it. Ouzi is a flavor packed vegetable rice that can be make with meat or just vegetable based. This time we made stuffed pumpkin with some ouzi rice! If you don't have a pumpkin around to use, any other squash can be used to make this rice stuffed squash dish. This can be made as a stuffed squash recipe vegetarian by omitting the ground meat or you can make it as stuffed squash ground beef and have that protein with the rice.
Vegetarian or packed with ground beef or lamb, this dish is delish and makes a beautiful presentation on any table!

Cheesy Stuffed Acorn Squash Is the Cozy Dinner You Need
Cheesy stuffed acorn squash is the satisfying dinner you need to make — just ask @FrankieCooks .

Acorn squash filled with an autumnal blend of sausage, farro, mozzarella and dried cranberries.
Ingredients:
2 acorn squash
1/2 cup pearled farro
3 tablespoons vegetable oil, divided
2 tablespoons butter
1 small yellow onion, chopped
2 garlic cloves, minced
1 red pepper flake packet (1/2 teaspoon)
8 oz ground Italian sausage
1/2 cup dried cranberries
2 tablespoons chopped fresh thyme
2 tablespoons chopped fresh parsley
1/2 cup shredded mozzarella cheese
1/2 cup grated parmesan cheese
Salt and pepper
Steps:
1. Preheat the oven to 400 degrees F.
2. Cut the squash in half, scoop out and discard the seeds, and rub each half with ½ tablespoon of vegetable oil and season with salt and pepper.
3. Place the squash cut side down on a baking sheet and roast for 35 minutes.
4. Bring a medium-sized pot of water to a boil, then add the farro and a pinch of salt and cook for 25-30 minutes until the farro is tender but still chewy. Drain and set aside in a large bowl.
5. Heat a skillet over medium heat and add 2 tablespoons butter and 1 tablespoon vegetable oil.
6. When the butter is melted, add the onion and season with salt and pepper. Sauté for 5-7 minutes.
7. Stir in the garlic and red pepper flakes and cook for an additional 2 minutes. Add the sausage and cook, stirring until browned, 6-7 minutes.
8. Stir the sausage mixture, cranberries, thyme, parsley and mozzarella into the farro. Season with salt and pepper. Fill each half of the squash with the farro mixture.
9. Preheat the broiler on high. Sprinkle parmesan cheese over the filled squash and broil for 5 minutes.

Turkey Sausage-stuffed Squash
Serves 4
INGREDIENTS
2 large acorn squash, halved and seeded
2 tablespoon olive oil
½ tablespoon garlic powder
½ tsp ground sage, divided
¾ lb turkey sausage links, casings removed
1 onion, finely chopped
½ cup finely chopped celery
4 oz mushrooms, chopped
1 apple, cored and chopped
1 cup panko crumbs
¼ cup grated Parmesan cheese
salt and pepper
2 eggs, beaten
PREPARATION
Preheat oven to 400°F (200°C).
Combine the olive oil, garlic, and 1/4 tsp sage. Brush the inside and outside of each squash with the garlic oil mix. Place the squash on a cookie sheet, cut side up, and roast for 50-60 minutes, or until fork-tender.
In a large skillet over medium heat, brown the sausage. When the sausage is browned, remove it from the pan and place on a paper towel-lined plate, set aside. To the skillet, add the onions, celery, and mushrooms and cook for 3 minutes. Add the apples and cook for another 2 minutes.
Return the sausage to the skillet then remove from heat. Season with 1/4 tsp sage, salt, and pepper. Stir in the panko and Parmesan. Add the egg and stir to combine.
Divide the stuffing evenly among the four squash halves. Return to the oven and bake for another 30 minutes.
