This easy coffee cake recipe constitutes an incredibly moist and fluffy yet tender crumb. It’s loaded with chopped walnuts and cinnamon topping that gives it a delicious crunch with each bite. A dessert that’s perfect to brighten up one’s mid-day coffee break.
You’ll need:
CAKE:
• 2 cups flour (spooned & leveled) *please notes below
• 1 tsp baking powder
• ½ tsp baking soda
• ½ tsp salt
• 1 cup unsalted butter (room temperature)
• 1 cup white sugar
• 2 large eggs (room temperature)
• 1 ½ tsp vanilla extract
• 1 cup sour cream (room temperature)
TOPPING:
• 1 ½ cup walnuts (chopped)
• 2/3 cup light brown sugar
• 2 tsp ground cinnamon
*Using 9”x 9” square baking pan
:: HELPFUL HINTS ::
* Measure your flour correctly (spoon & level method). Adding too much flour will result to dry and crumbly texture when baked. Fluff your flour with a spoon, spooned it into your measuring cup, and use the back of the knife to level it off.
* Don’t over bake the cake. Take it out of the oven when the inserted toothpick comes out clean.
* Let the cake cool in the pan for 15-30 minutes. Best served and enjoyed with coffee or tea.

Sour cream coffee cake is an old favorite. It is easy to prepare and delicious to eat. Recipe follows. Enjoy!
SOUR CREAM COFFEE CAKE w. BLUEBERRIES
(This is for the full recipe: I cut mine by 1/3)
1 1/2 c sugar
3/4 c butter, softened
3 eggs
1 1/2 tsp vanilla
1 1/2 tsp baking powder
1 1/2 tsp baking soda
3/4 teaspoon salt
3 cups all purpose flour
1 1/2 cups sour cream
1 cup fresh or frozen (thawed and drained) blueberries
1 tablespoon flour
1 tablespoon sugar
1 tsp lemon zest
Preheat oven to 350 degrees F. Grease a tube pan, Bundt pan or two loaf pans.
Prepare the blueberries by sprinkling with flour and sugar. Set aside. Sift together the flour, baking powder, baking soda and salt.
In large bowl, beat sugar, butter, eggs, lemon zest, and vanilla. Beat in flour, baking powder, baking soda, and salt alternately with the sour cream on low speed.
Spread half of batter in prepared pan. Top with blueberries and add the rest of the batter. Gently fold together the blueberries and batter with a rubber spatula.
Bake for 45 minutes and test with a tooth pick for doneness. Bake an additional 8 to 10 minutes if necessary, or until pick comes out clean. Cool for 10 minutes. Remove cake from pan and cool completely on a wire rack. Top with Lemon Glaze
Lemon Glaze:
1 tsp fresh lemon zest
1 cup of sifted powdered sugar
1/8 teaspoon salt
1 teaspoon lemon juice
1 tablespoon cream or milk
Combine glaze ingredients and stir well until smooth.
Spread over cake and let set until glaze gets slightly firm.
Makes about 8 servings.

Sour Cream Coffee Cake

Ingredients
12 tablespoons (1 1/2 sticks) unsalted butter at room temperature
1 1/2 cups granulated sugar
3 extra-large eggs at room temperature
1 1/2 teaspoons pure vanilla extract
1 1/4 cups sour cream
2 1/2 cups cake flour (not self-rising)
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon kosher salt
For the streusel:
1/4 cup light brown sugar, packed
1/2 cup all-purpose flour
1 1/2 teaspoons ground cinnamon
1/4 teaspoon kosher salt
3 tablespoons cold unsalted butter, cut into pieces
3/4 cup chopped walnuts, optional
For the glaze:
1/2 cup confectioners' sugar
2 tablespoons real maple syrup
Directions
Preheat the oven to 350 degrees F. Grease and flour a 10-inch tube pan.
Cream the butter and sugar in the bowl of an electric mixer fitted with the paddle attachment for 4 to 5 minutes, until light. Add the eggs 1 at a time, then add the vanilla and sour cream. In a separate bowl, sift together the flour, baking powder, baking soda, and salt. With the mixer on low, add the flour mixture to the batter until just combined. Finish stirring with a spatula to be sure the batter is completely mixed.
For the streusel, place the brown sugar, flour, cinnamon, salt, and butter in a bowl and pinch together with your fingers until it forms a crumble. Mix in the walnuts, if desired.
Spoon half the batter into the pan and spread it out with a knife. Sprinkle with 3/4 cup streusel. Spoon the rest of the batter in the pan, spread it out, and scatter the remaining streusel on top. Bake for 50 to 60 minutes, until a cake tester comes out clean.
Let cool on a wire rack for at least 30 minutes. Carefully transfer the cake, streusel side up, onto a serving plate. Whisk the confectioners' sugar and maple syrup together, adding a few drops of water if necessary, to make the glaze runny. Drizzle as much as you like over the cake with a fork or spoon.

Hey! guys, welcome back to my channel, I just found this recipe one of my friend years ago that I remembered, I made this once again, because I was craving something like a coffee cake to go along with my coffee every morning to start my day going. And I love sharing some ideas that I love the most...so what I did is I added blueberries to the cake to make it different and have fruit in it.

Blueberry Sour Cream Coffee Cake
Ingredients;
1/2 cup butter or one stick melted
3/4 cup sugar
1/4 cup brown sugar
1 tsp vanilla
2 eggs
1 cup sour cream
3 cups of flour
1 tsp baking soda
1 tsp baking powder
1 1/2 cups blueberries
fillings ingredients;
5 tbsp butter melted
3/4 cup brown sugar
1 1/2 tsp cinnamon
Preheat the oven 350 degrees and bake for 50 minutes
