All Butter Crust & Blueberry Pie Recipe//How To
Here it is!!! The best blueberry pie recipe. You may want to save this flaky pie crust recipe too because you can use it for anything!!
RECIPE:
FILLING:
ingredients:
4 Cups Blueberries
1/2 Cup Sugar
1/8 tsp Sea Salt
1/4 cup and 1 TBSP Tapioca Flour
1 TBSP Orange Juice
1 tsp orange Zest
instructions:
1. Zest and juice your orange
2. Mix together tapioca flour, sugar, and salt until well combined.
3. Squish 1/2 of your blueberries thoroughly!!
4. To your dry ingredients, add squished berries, orange zest, and orange juice and stir until combined.
5. Allow mixture to sit for 15 mins.
6. Fold in the remaining whole blueberries.
7. line your pie pan with foil then add in your filling mixture.
8. Freeze 8-10 hours or until firm
9. If not using right away, wrap with plastic wrap and store in a ziplock bag.
All-Butter Flaky CRUST:
ingredients:
2 1/2 Cups Flour
1 TBSP Sugar (Optional)
1 tsp cinnamon (Optional)
1 tsp salt
2 sticks (1 Cup) Salted Butter
1/4 to 3/4 cup of ice water
instructions:
1. mix together flour, sugar/spices, and salt.
2. Cut in butter until pea sized chunks persist
3. add in 1/4 cup of ice water
4. Add in more water by TBSP until dough sticks together but isn't sticky
5. Allow the dough to rest in the fridge for 30 mins or so.
6. If freezing, wrap in plastic wrap and store in a ziplock bag.
PUTTING IT ALL TOGETHER:
Flour for rolling out crusts
1 egg yolk mixed with 1 tbsp water
1. Roll out pie dough
2. Fork pie dough to prevent bubbles
3. Add in frozen blueberry filling
4. Roll out your second dough and lattice or lay over top.
5. Don't forget your vent holes if not using the lattice pattern.
6. remove excess pie dough. Crimp edges.
7. Brush on Egg wash
8. sprinkle with sugar.
9. Bake @ 325 for an hour and a half.
10. May broil if you'd like
11. ALLOW THE PIE TO COOL TO ROOM TEMP!!!! This is the most important step. If you don't allow your pie to cool, you will have a runny pie.

EASY Blueberry Pie Filling (Blueberry Hand Pies and Blueberry Danish)

Blueberry Hand Pies:
INGREDIENTS
2 cups (about 9 ounces) blueberries (see note)
¼ cup water
1/3 cup (67g) granulated sugar
1 tablespoon cornstarch
1 tablespoon water
1 tablespoon lemon juice
INSTRUCTIONS
Place blueberries and ¼ cup water in a medium saucepan. Heat over medium-low heat and cook, stirring occasionally, until you notice some of the blueberries breaking down, about 3-5 minutes depending on how hot your stove is.
While they are cooking, mix the cornstarch, 1 tablespoon water and lemon juice in a small bowl and stir until smooth. Set aside.
Add the sugar and stir. Then stir the cornstarch slurry to make sure there are no lumps and stir it into the blueberries. Stir constantly until mixture thickens, just 1-2 minutes or so. Once the mixture bubbles it’s done. Remove from the heat and transfer to a jar or bowl to cool.
Cover warm mixture so it doesn’t form a skin and let come to room temperature, then chill if not using.
Store in an airtight container in the refrigerator for up to 1 week.
Use as directed in desired recipes, as a no-bake filling for pie or lush, or use it in a baked pie or danish. Follow the directions on the recipe you're using for baking instructions.
