Shopping List:
2 cups cooked basmati rice
4 cups broccoli
3-4 tbsps butter
1 diced onion
1 tsp roasted garlic base
1 tbsp dijon mustard
2 tbsps flour
2 cups half and half or heavy cream
2 tbsps sour cream
1 cup grated parmesan cheese
1 cup monterey jack cheese
celery salt, smoked paprika, all purpose seasoning
1.5 cups colby jack cheese
1 cup crushed garlic butter ritz crackers
diced parsley
Bake in oven at 350 for 45 minutes.
POTATO AND CHEESE CASSEROLE | The Best Cheesy Potato Casserole Recipe ❤️
Episode 10: The ONLY Potato Cheese Casserole Recipe you will EVER need!!! It is sooooo good that it is a staple in my house. It makes the perfect accompaniment to many traditional Slovenian meals. It’s also guaranteed to be a crowd-pleaser at any potluck. The nice thing is it can be made ahead of time, like the night before and then Baked the next day!
*WARNING* The only problem is you will be required to bring this Potato Cheese Casserole to EVERY potluck & gathering moving forward!
Ingredients:
* 5-6 large baking potatoes
* 500ml sour cream
* 1 x block of cheddar cheese (I use black diamond medium cheddar cheese - 400g), grated
* 1 x bunch of green onions, diced
* 1 1/2 tsp’s salt
* 1/4 tsp pepper
Directions:
❤️ We begin by boiling 5-6 large baking potatoes until cooked
❤️ While potatoes are cooking. We begin by grating the cheddar cheese, dicing the green onions including the green stems
❤️ Once the potatoes are cooked. Drain the potatoes and run under cold water to cool slightly. Peel & then Grate the potatoes into a large bowl.
❤️ Add the grated cheese, diced green onions, and tub of sour cream to the bowl with the grated potatoes.
❤️ Add salt & pepper and than mix by hand until well combined.
❤️ Place in a 9 x 13” casserole dish - cover and refrigerate for several hours or overnight.
❤️ Preheat oven to 350 degrees. Bake uncovered for 35-45 minutes, or until
heated through.

St. Patrick's Day Green Casserole Dish - Challenge
I was challenged by the lovely Cat over at Vegas fruity. Check out what she made-
Ingredients
-small bundle of black kale
-head of broccoli
-bundle of asparagus
-bag of frozen peas
-bag of frozen artichokes
(saute all the above ingredients with a little water or low sodium veggie broth. Add some dry herbs of choice. I used about 1/2 tbsp of dry basil, 1 tsp of oregano, 1 tsp of garlic powder, 1 tsp of onion powder and 1 tsp of 21 seasoning salute.)
For the sauce- blend up-
-1-2 cups of fresh basil
-1/2 cup to 1 cup of fresh Italian parsley
-1/2 cup to 1 cup of arugula
-1 zucchini
-about 1/2 cup of pine nuts
-juice of 1 lemon
-2 cloves of garlic
-1 tsp of 21 seasoning salute
-1 tsp onion powder
-salt and pepper to taste
-1/3 to 1/2 block of tofu (I used firm) *optional
-about 3/4 cup of unflavored, unsweetened non-dairy milk *optional
* I liked using the tofu and almond milk in this sauce, but it could be made without it. You can always use some olive oil if you wish, I just don't like adding oil to my dishes.
*Adding an avocado to this sauce, in place of tofu, would also give it a creamy texture.
-I used a mung beans pasta. You can use any kind of pasta you want or skip this. This dish would also be delicious on top of some rice or quinoa.
-Plate and top with some chopped scallions and some avocado slices. Pour on sauce.
-Enjoy!

First Time Making Keto Green Bean Casserole|Testing Keto Recipes|Low Carb|Dairy Free
I wanted to make a low carb and keto friendly green bean casserole for my Thanksgiving dinner party and I found one at lifemadesweeter.com.
This recipe turned out to be absolutely delicious, BUT it was a TON of work to chop up all of the vegetables by hand. I would definitely make this again, but maybe buy green beans and mushrooms already chopped up and buy garlic that was already minced. That would definitely reduce the amount of time this recipe takes to make.
The sauce never did really thicken, so if I was to do this over again, maybe use xanthan gum ( to thicken it AND/OR just bake at a higher temperature. Try baking it at 425 degrees and keep it in the oven until all of the sauce reduces.

To make this recipe dairy free, I substituted:
***butter flavored coconut oil ( instead of butter
***coconut cream instead of heavy cream
***my own homemade dairy free mozzarella cheese instead of regular shredded mozzarella cheese (here's my video on how to make dairy free mozzarella cheese:
***Pork rinds instead of crushed parmesan crisps
