Black Bean Quesadillas - Nutrition Education Program
Enjoy a quesadilla any night of the week with Jen Eby, Community Action Partnership Nutrition Educator and special guest star, Madi! This quesadilla recipe can be served as a tasty lunch, dinner or side dish.
Ingredients
3/4 cup chunky salsa (or Pico De Gallo)
1 can 15.5 ounce low-sodium black beans (drained and rinsed)
2 cups shredded reduced-fat Colby & Monterey Jack cheese
2 tablespoons fresh cilantro (finely chopped)
4 8 inch flour tortillas
1/2 teaspoon extra virgin olive oil
Directions
1. Using a small-hole strainer, drain liquid from salsa; discard liquid.
2. Transfer leftover tomato mixture to a medium bowl.
3. Mix in black beans, cheese, and cilantro until combined.
4. Divide black bean mixture evenly over half of each tortilla (about 1/2 cup each).
5. Fold tortillas in half.
6. Heat large griddle or skillet over medium-high heat.
7. Brush with oil.
8. Place filled tortillas on a griddle.
9. Cook, carefully flipping once, until tortillas are gold brown and crisp and cheese filling melts, about 5 minutes.
10. Cut quesadillas into wedges.
Notes
- Serves 8 as a side dish
- Serving suggestions: For a wholesome dinner, serve with Tasty Lemon and Herb Chicken, Brown Rice with Vegetables, and a piece of fruit for dessert.

Cheesy Beef Quesadillas
These delicious, easy cheesy beef quesadillas are ready to eat in just 20 minutes, making them a perfect weeknight dinner option. Loaded with seasoned ground beef and gooey melted cheese inside crisp flour tortillas, everyone will love this simple Mexican classic.

INGREDIENTS
2 tbsp butter divided
1 lb ground beef
1 tbsp garlic paste
1 tsp onion powder
1 tsp salt
1 can tomato sauce with basil garlic, oregano
½ tsp red pepper flakes optional
8 10- inch flour tortillas
4.5 cups colby jack cheese shredded
INSTRUCTIONS
In a large skillet over medium heat add ground beef. Cook until no longer pink. Drain grease and return beef to skillet.
Continue to cook beef until browned. Add garlic paste, onion powder, salt, tomato sauce, and red pepper flakes. Stir well to combine.
In a separate large skillet over medium-low heat add ½ tbsp of butter and allow to melt.
Place a tortilla in the skillet. Add cheese, beef mixture, then more cheese to the tortilla. Lay another tortilla on the top and spread butter over the tortilla.
Flip the quesadilla over and continue cooking until all of the cheese is melted.
Repeat steps for each quesadilla.
