How To make Berry Breakfast Cake
1 1/2 c AM Blue Cornmeal
1/2 c AM Unbleached White Flour
1 tb Non-alum baking powder
2 Egg whites
1 c Blueberries or boysenberries
1/2 c Blueberry syrup
-OR- boysenberry syrup 1 tb AM Unrefined Vegetable Oil
1 1/2 c Milk or soymilk
Combine first three ingredients. Beat egg whites until fluffy. Beat liquids, and gently fold in egg whites. Stir in dry ingredients, pour batter into an oiled cake pan, sprinkle with berries, and place on a baking sheet. Bake at 425 F. for 30-35 minutes until golden. How to make Lemon Blueberry Breakfast Cake
Fresh lemon and blueberries make this delicious breakfast cake sing the song of spring! It goes together pretty quick and is delicious for breakfast or brunch.
1/2 C soft butter
zest of 1 lemon
1 C sugar
1 egg
1 tsp vanilla
2 C flour
2 tsp baking powder
1 tsp salt
2 C fresh or frozen blueberries
1/2 C buttermilk
Mix butter, zest of lemon and sugar together. Mix in vanilla and egg. Take 1/4 C of the flour and toss with blueberries, set aside. Add all dry ingredients and mix in buttermilk. Add blueberries and stir in gently, batter will be thick. Place in a greased 8x8 or 9x9 baking dish. Bake at 350° 8x8=35-45 minutes and 9x9 = 35-40 minutes baking time. This easily doubles for a 9x13 which baking time may take up to 50 minutes. Cool for 10 minutes before serving.

This recipe is a favorite. It begins with a simple batter made with ingredients that you always have on hand. The cake base is buttery and scented with vanilla and almond. When you rub citrus zest into sugar, the oils release and perfume the sugar. This cake is so flavorful, and takes mere minutes to get into the oven.
This cake can be made in a million different ways. Think of this cake as a base to use for whatever you have in season or your fruit drawer. This particular version has orange zest running through it and is topped with raspberry and blackberries. Other variations could be lemon and blueberry, cherry, peach, apple, and cranberry. Simply replace the zest and extracts to match your flavors. All are delicious and go perfectly with a cup of coffee or tea. This video uses a 9-inch cast iron skillet, but a 9-inch cake pan is fine if you do not have one.

This is one of my absolute favourite cakes to make for my family & friends especially when local fresh blueberries are in season. When blueberries are not in season, I replace them with the same amount of frozen blueberries...and just make sure to bake it a little longer as frozen blueberries may require extra baking time. We eat my Blueberry Cake for breakfast as well as desserts (with a bit of whipped cream) & a lot of extra fresh blueberries! Enjoy my recipe! Tracy

Ingredients:
1 3/4 cup (225 g) all-purpose flour
1 tbsp baking powder (14g)
1/2 tsp coarse salt (2g)
1/2 tsp (2 g) ground cinnamon (optional) or 1 tsp finely grated lemon zest
1 large egg at room temperature
3/4 cup (145 g) granulated sugar
1/4 cup (60 mL) non-flavour oil (or melted unsalted butter or melted coconut oil)
1/4 tsp vanilla bean paste (or up to 1 tsp pure vanilla extract)
1/2 cup (125 mL) whole milk at room temperature (3.8% or 4% fat)
2 cups (12 oz or 340 g) fresh or frozen blueberries
(If your blueberries are sour, sprinkle a tbsp of granulated sugar on them just before adding them to the batter.)
For vegan or other options, you can substitute 1 egg for:
1/4 cup silken tofu
Or
1/4 cup banana
Or
1/4 cup apple sauce
*1/4 cup = 4 tbsp = 60 mL
For serving:
Powder or icing sugar
Fresh blueberries
Cream (whipped)
*Frozen blueberries may require extra baking time of 5+ minutes.
Bake in preheated oven at 350F or 180C for 40-45 mins. Baking time may vary depending on the type of baking pan (dark or light in colour, glass or ceramic...)...frozen or fresh berries as well as the amount of berries..:so please check the cake at 35 mins and adjust accordingly.
