Vanilla wafers are under-appreciated — not only are they a classic cookie, but the rich, buttery cookie that’s just bursting with yummy vanilla also goes with so many desserts! You can’t have my Creamy Banana Pudding without a crisp nilla wafer, or my 15 Minute Banana Cream Pie (No Bake). And, you can also use nilla wafers in my Homemade Strawberry Shortcake Bars! Honestly, for such a simple cookie, the sky’s the limit, so think out of the box (the prepackaged cookie box, specifically).
Homemade vanilla wafers are super easy to make, and they’re so much more flavorful than the kind you can pick up at the store. This nilla wafer recipe also earns bonus points because the cookies keep really well, so you can make them in advance for any of your nilla needs.

RECIPE:
1 CUP ALL-PURPOSE FLOUR
1/4 TSP BAKING POWDER
1/4 TSP SALT
3/4 CUP BUTTER, AT ROOM TEMPERATURE OR CUT IN THIN PATS
1 CUP FIRMLY PACKED LIGHT BROWN SUGAR
1 TSP VANILLA
1 LARGE EGG
3/4 CUP TOASTED SESAME SEEDS, SEE NOTE
THOROUGHLY STIR TOGETHER THE FLOUR, BAKING POWDER AND SALT.
CREAM THE BUTTER, SUGAR AND VANILLA. BEAT IN THE EGG, THEN THE FLOUR MIXTURE UNTIL BLENDED. FOLD IN THE SESAME SEEDS.
LINE A COOKIE SHEET WITH WAX PAPER. (I ALSO USED PARCHMENT, AND FOUND IT WORKS BETTER) DROP LEVEL 1/2 TEASPOONFULS OF THE BATTER, AT LEAST 1 INCH APART, ONTO THE LINED SHEET.
BAKE IN A PREHEATED 300*OVEN UNTIL GOLDEN-8 TO 10 MIN.
SLIP THE SHEET OF WAX PAPER (OR PARCHMENT) WITH THE COOKIES ON IT, ONTO A COUNTER; LET STAND UNTIL THE COOKIES ARE COLD.
REMOVE COOKIES FROM WAX PAPER (OR PARCHMENT) WITH A METAL SPATULA. STORE IN A TIGHTLY COVERED CONTAINER.
MAKES 223 1-INCH WIDE, THIN, CRISP WAFERS.
NOTE: TO TOAST SESAME SEEDS, SPRINKLE . THEM OVER THE BOTTOM OF A 15 X 10 JELLYROLL PAN AND BAKE IN A PREHEATED 300* OVEN, STIRRING OFTEN, UNTIL GOLDEN 20 MINUTES.

Ingredients:
Prepare Chocolate Sauce:
-Olper’s milk 1 Cup
-Cocoa powder ½ Cup
-Sugar ¾ Cup
-Namak (Salt) ¼ tsp or to taste
-Cornflour 1 tsp or as required
-Vanilla essence 1 tsp
-Makhan (Butter) 1-2 tbs
Prepare Waffles:
-Olper’s milk 1 & ¼ Cup (room temperature)
-Anday (Eggs) 2 (room temperature)
-Vanilla essence ½ tbs
-Makhan (Butter) melted 100g
-Maida (All-purpose flour) 2 Cups
-Cocoa powder ¼ Cup
-Baking powder 2 & ½ tsp
-Namak (Salt) ¼ tsp
-Brown sugar powdered ¾ Cup
Assembling:
-Cookie crumbs
-Olper’s whipped cream
-Chocolate chips
-Icing sugar
-Banana slices
-Cherry
-Vanilla ice cream
Directions:
Prepare Chocolate Sauce:
-In a saucepan,add milk,cocoa powder,sugar,salt,cornflour,vanilla essence & whisk well.
-Turn on the flame & cook on low flame while mixing continuously until sauce thickens (3-4 minutes).
-Add butter & mix well.
-Let it cool.
Prepare Waffles:
-In a jug,add milk,eggs & whisk well.
-Add vanilla essence,melted butter,whisk well & set aside.
-On a bowl,place a sifter,add all-purpose flour,cocoa powder,baking powder,salt & sift together.
-Add brown sugar & mix well.
-Add milk & eggs mixture & whisk until well combined.
-Transfer the batter in a squeeze bottle.
-Preheat waffle maker & grease with cooking oil.
-Pour prepared waffle batter evenly on waffle iron,close the lid & cook for 5-6 minutes (makes 6-7).
Assembling:
Option # 1: Serve with Olper’s Whipped Cream
-On chocolate waffles,pour prepared chocolate sauce,cookie crumbs,olper’s whipped cream,chocolate chips, icing sugar & garnish with banana slices,cherry & mint leaves.
Option # 2: Serve with Ice Cream
-On chocolate waffles,add vanilla ice cream,prepared chocolate sauce,chocolate chips & garnish with cherry & mint leaves.

-Saucepan mein doodh,cocoa powder,cheeni,namak,cornflour aur vanilla essence dal ker ache tarhan whisk ker lein.
-Chulha on karein aur musalsal chamcha chalatay hoye sauce garha ho janay tak paka lein (3-4 minutes).
-Makhan dal ker ache tarhan mix karein.
-Thanda ker lein.
Prepare Waffles:
-Jug mein doodh aur anday dal ker ache tarhan whisk ker lein.
-Vanilla essence aur melted makhan dal ker ache tarhan whisk karein & side per rakh dein.
-Bowl per sifter rakh dein,maida,cocoa powder,baking powder aur namak dal ker ek saath sift ker lein.
-Brown sugar dal ker ache tarhan mix karein.
-Anday & doodh ka mixture dal ker ache tarhan whisk ker lein.
-Batter ko squeeze bottle mein transfer ker lein.
-Waffle maker ko preheat karein aur cooking oil sa grease ker lein.
-Tayyar waffle batter ko waffle iron mein evenly pheela lein aur lid bund ker ka 5-6 minutes kliya paka lein (makes 6-7).
Assembling:
Option # 1: Serve with Olper’s Whipped Cream
-Chocolate waffles per tayyar chocolate sauce,cookie crumbs,olper’s whipped cream,chocolate chips & icing sugar dal dein,banana slices,cherry & mint leaves sa garnish ker ka serve karein.
Option # 2: Serve with Ice Cream
-Chocolate waffles per vanilla ice cream,tayyar chocolate sauce & chocolate chips dal dein,cherry & mint leaves sa garnish ker ka serve karein.
