Steak Mushroom And Cheese Meat Pie Recipe - 30 Day Dry Aged Steak Pie - How To Make Steak Pie Recipe Glen And Friends Cooking.
This steak meat and cheese pie features some 30 day dry aged strip loin as its base. The dry aged steak added a great base note earthy flavour to this meat pie recipe. Making meat pies is pretty easy, and beef pies are among my favourites. But this steak and cheese pie recipe is really amazing.
Ingredients:
500g beef, ground or chopped
Handful of mushrooms, chopped
1 medium onion, chopped
1 celery stalk, chopped
1 carrot, chopped
5 mL (1 tsp) thyme
5 mL (1 tsp) marjoram
Salt and pepper to taste
500 mL (2 cups) water or stock
30 mL (2 Tbsp) Marmite
30 mL (2 Tbsp) vinegar
15 mL (1 Tbsp) softened butter
15 mL (1 Tbsp) flour
200g grated cheddar
1 recipe of pie dough for a double crust pie

Beaten egg yolk to glaze the pies
Method:
In a large fry pan, over medium high heat; heat some oil and brown the chopped beef.
Add in the onion, celery, mushrooms and carrot.
Continue cooking until vegetables are softened, then season with salt, pepper, thyme, and marjoram.
Stir in the water (or broth, or combo), Marmite, and vinegar.
If using water, a bouillon cube or Knorr stockpot would be great.
Reduce temp, and cover.
Simmer for 20-30 minutes.
Roll out the dough and line 4 individual pie plates. (place in fridge until needed)
If the sauce for the filling needs to be thickened: use a beurre manié.
Make the beurre manié by mixing together equal parts softened butter and flour; then stirring into the sauce.
Let the filling cool to room temp before filling the pie cases.
Cover with a top crust, crimp to seal and brush with an egg wash.
Place in a preheated 450ºF oven and bake for about 45-60 minutes.
These pies are great to freeze and bake from frozen at a later date.

Hello folks!
So tonight for tea, I made this wonderful Steak & Stilton pie. If you don’t like blue cheese, feel free to leave it out :) you’ll still end up with a lovely steak pie.

What I used - 8 (20cm) inch pie tin (serves 4-5)
1 .5 lb (24oz) Braising steak/Casserole steak/chuck steak - cut into chunks
55g (2 oz) Stilton - or similar blue cheese
1 Onion - Diced
2 Garlic cloves - Chopped
2 Tablespoons plain/all purpose flour
200ml (7 fl oz) Beef stock/broth
300ml (10 fl oz) Stout/Guinness or Red wine
1 Tablespoon tomato puree/paste
1 Tablespoon Worcestershire sauce
2 Bay leaves (optional)
Olive oil for frying
Salt & Pepper to taste
1 Sheet ready made shortcrust pastry (for the base)
1 Sheet ready made puff pastry (for the top)
1 Beaten egg

INGREDIENTS:
- PUFF PASTRY SHEETS (20 PCS FOR 10 PIES)
- 350GR GROUND BEEF
- 50GR CARROT
- HALF AN ONION
- 2 CLOVES GARLIC
- 1 STALK GREEN ONION
- SEASONING: SALT (TO TASTE, BLACK PEPPER (HALF TEASPOON), PAPRIKA (HALF TEASPOON)
BAKE IN 200 DEGREE CELSIUS FOR 15-20 MINUTES

Rough Puff Pastry:
350g All-Purpose Flour
60g Butter - Frozen and grated
200g Butter -Frozen and grated (for laminating)
120-150 ml Ice Cold Water
1 tsp Fine Sea Salt
1/2 tsp White Vinegar
Filling:
500g High-Quality Beef Mince
1 Small Onion or Half a Large Onion
1 1/2 Cup Beef Stock
1 Can (440ml) Guinness Stout or favourite dark beer2TBSP Tomato paste
2 Tbsp Worcestershire Sauce
2 Tbsp Corn Flour
