How To make Beef Roulades
Ingredients

pound
beef round steak, 1/2 inch thick
4
each
bacon slices
3/4
cup
celery, diced
3/4
cup
onion, diced
1/2
cup
green bell pepper, diced
10
oz
can beef gravy
Directions:
Cut steak into four serving pieces. Place bacon slice on each piece of meat. Mix celery, onion and green pepper. Place about 1/2 cup mixture on each piece of meat. Roll up meat. Secure ends with wooden picks.
Wipe beef rolls with paper towels. Place in Crock-Pot. Pour gravy evenly over steaks to thoroughly moisten. Cover Crock-Pot and cook on Low for 8 to 10 hours or on High for 4 to 5 hours. Skim off fat before serving.

This amazing beef rouladen is stuffed up with mustard, pickles, and onions and served with a delicious easy to make beef gravy. You will love how simple this is to prepare and just how flavorful it is.
Rouladen is a classical German recipe consisting of thinly sliced and pounded out beef that is stuffed with salt, pepper, mustard, bacon, onions, and pickles. You sear the beef and then simmer it in a flavorful beef sauce until it is tender.
This is a recipe I used to make at one of the restaurants I worked at when we had a lot of leftover chunks of meat. It’s easy to make and it really packs a punch in the flavor department, however, you will need to allow some time for them to cook in the oven.

Ingredients for the Rouladen:
For the Rouladen:
• 2 pounds top round beef, cut into 8 large slices
• 1/3 cup Dijon or German mustard
• 8 slices of bacon, cut in half
• ½ peeled and thinly sliced yellow onion
• 5 small-medium size pickles, julienne
• salt and pepper
For the Sauce:
• 2 thinly sliced leeks
• 1 peeled and large diced yellow onions
• 2 peeled and large diced carrots
• 2 large diced celery stalks
• 6-8 parsley stems with leaves
• 2 tablespoons tomato paste
• 1 cup cabernet sauvignon wine
• 4 cups beef stock
• 2 tablespoons unsalted butter
• salt and pepper to taste
• 2 tablespoons of red currant jelly, optional
Ingredients for the Spaetzle:
• 3 cups all-purpose flour
• 5 large eggs
• ¾ cup water
• 1 teaspoon salt
• ¼ cup unsalted butter

10 slices rouladen meat
5 dill pickles sliced into 1/4 spears
10 rashers bacon
1 large onion sliced
10 tbsp wholegrain mustard
Smoked paprika
Salt
Pepper
4 tbsp avocado oil/tallow/lard/bacon grease
ROULADEN GRAVY RECIPE:
1 cup water to deglaze
1 tbsp cornstarch
1 tbsp water
1/2 cup milk
generous splash of red wine

Rouladen- German Beef Roulades
This is our recipe for Rouladen. Although it may not be 100% authentic, we have used as many authentic ingredients as we could source.
Our Rouladen is made with a Top Round beef roast that we asked the butcher to slice thin for Rouladen.
We sourced German gherkins and German mustard. We used a stone ground mustard. I believe a more authentic dish uses German yellow or dijon mustard.
My wife’s family is of German descent and this dish has been in her family for almost a Century, although I accidentally said decade in the video.
We topped or beef with mustard, smoked bacon, sautéed onions and the gherkins and rolled into a roulade. We browned our roulades and used the fond from the pan to deglaze carrots, celery and onions with red wine and beef stock.
We then placed our roulades into a 325 degree oven for 2 hours. The roulades were then set aside and the vegetable were strained from the liquid. We added a corn starch slurry to thicken and placed the roulades back into the sauce before serving.
