Easy Enchilada Casserole
This easy dish really hits the spot when you're craving the taste of hot and cheesy beef enchiladas.
Ingredients:
½ Pound ground beef (242 grams)
½ Onion, chopped
½ cup of water
½ packet of taco seasoning
1 ½ cups crushed tortilla chips
8 oz. Mild Picante sauce
10 oz. Mild Red Enchilada Sauce
¼ cup chopped pickled jalapeno peppers
2 cups grated cheese
Bake at 325 until hot & cheese melts (30-45 minutes).

Beef Enchilada Casserole
Enchiladas without all the work – this Beef Enchilada Casserole recipe is family friendly and done in under 30 minutes! It’s the perfect dinner for when time is short but you still want a lot of flavor.

1 lb ground beef
1 teaspoon taco seasoning
1/4 teaspoon salt
1 10-oz can enchilada sauce
3/4 cup water
1/2 cup medium thick and chunky salsa
12 (6-inch) corn tortillas
1/4 cup fresh cilantro, chopped, divided
1 cup shredded Colby Jack cheese
sour cream and lime wedges, for serving
Preheat the oven to 350ºF.
Heat a large skillet over medium-high heat and add the ground beef, taco seasoning and salt. Cook, stirring and breaking up the beef, until the beef is browned and cooked through. Drain any fat, if needed.
Add the enchilada sauce, water and salsa and bring to a boil. Cook for 4-5 minutes, until slightly reduced. Remove from the heat.
Stack the tortillas and cut into 1-inch strips. Arrange half of the tortilla strips in the bottom of a 9-inch deep dish pie dish. Add half of the beef mixture, then sprinkle half of the cheese over the top. Sprinkle 2 tablespoons of the chopped cilantro on top. Repeat the layers, using the remaining tortillas, beef and then cheese.
Bake until the cheese is melted and bubbly, about 10 minutes. Sprinkle the remaining cilantro over the top before serving. Serve with sour cream and lime wedges.

BEEF LOVER ENCHILADAS ❤
These BEEF ENCHILADAS, are amazing, very TEX-MEX, just like my mom taught me, I have made some adjustments according to my taste, and I think they are super delicious, easy and will have you begging for more. One good thing about these BEEF ENCHILADAS, is you can make them with just cheese or you can make them with beef (both are delicious) the sauce is the one that shines in this recipe, and it is made to perfection. you can use mild cheddar cheese or American cheese which is my favorite, this recipe can make 8-10 enchiladas just depends how full you stuff them.
INGREDIENTS
1 LB. ground beef 80/20 (drained)
2 & 1/2 tbsp melted butter or oil
2 Tbls flour
2 Tbsp chili powder (I made my own, but you can use Gebhardts or other) look for Gebhardts
1 Tbsp paprika
3 C. Chicken broth
1 tsp onion powder
2 tsp garlic powder
1 tsp cumin
1/2 tsp sugar
1 tsp oregano
1 tsp chicken bouillon
pepper (to your liking)
salt (to your liking) CAREFUL DON'T OVER DO IT
8 corn tortillas
veg oil for frying tortillas
• pat dry tortillas of oil before rolling

RED ENCHILADA SAUCE:
• 2 tablespoons vegetable oil
• 1 tablespoon cornstarch
• 4 tablespoons chili powder
• 1/2 teaspoon garlic powder
• 1/2 teaspoon salt
• 1/4 teaspoon ground cumin
• 1/4 teaspoon dried Mexican oregano
• 2 cups vegetable broth
GROUND BEEF FILLING:
• 1½ pounds lean ground beef
• 1 white onion diced
• 1/2 teaspoon salt
• 1/4 teaspoon black pepper
• 8 ounces diced green chiles
ENCHILADAS:
• 12 corn tortillas
• 2 tablespoons vegetable oil for frying
• 3 cups shredded Monterey Jack cheese
• 1/4 cup chopped fresh cilantro

00:00:14 - HOW TO MAKE THE RED ENCHILADA SAUCE
1️⃣ Heat vegetable oil in a medium saucepan over medium heat. Whisk in cornstarch, chili powder, garlic powder, salt, cumin, and oregano. Pour in vegetable broth and bring to a simmer until thickened, about 2-3 minutes. Remove from heat and set aside.
00:01:11 - MAKE THE GROUND BEEF FILLING FOR ENCHILADAS
1️⃣ Heat a large skillet over medium-high heat. Add in ground beef and onion and season with salt and pepper. Cook until ground beef is browned and cooked through, about 7 to 10 minutes. Drain any excess fat. Stir in green chiles.
00:01:45 - ASSEMBLE ENCHILADAS
1️⃣ Preheat oven to 350 degrees and lightly grease a 9x13 pan with nonstick cooking spray. Spread 1/2 cup of enchilada sauce in the bottom of the pan.
2️⃣ 00:01:57 - Heat 1 tablespoon of vegetable oil in a small skillet over medium heat. Working one at a time, fry tortillas in oil until soft. DO NOT CRISP.
3️⃣ 00:02:18 - Dip each tortilla into the enchilada sauce to coat and set on a plate. Fill with a scoop of the ground beef filling and top with a generous pinch of cheese. Roll and place into the prepared 9x13 pan. Drizzle remaining sauce over enchiladas in the pan and top with remaining shredded cheese. Bake, uncovered, in the preheated oven for 20-25 minutes until cheese is warm and bubbly. Top with chopped cilantro and serve hot.

Today, I am combining jalapeno cheddar cornbread and ground beef enchilada filling to create a delicious tamale pie recipe. This is not a pie nor a tamal, but it is a tasty cornbread casserole bake.

INGREDIENTS
2 Tbsp oil
1 lb (454 g) lean ground beef
1 beef bouillon cube
1 1/2 to 2 Tbsp chili powder
1 tsp garlic powder
1 tsp onion powder
1/2 tsp ground cumin
2 Tbsp (20 g) all-purpose flour
salt and pepper to taste
8 fl oz (236.5 ml) water
1 1/4 cup (125 g) shredded cheddar cheese
CORNBREAD MIX
1 cup (130 g) yellow cornmeal
1/2 cup (65 g) all-purpose flour
1 Tbsp (15 g) baking powder
2 Tbsp (25 g) sugar
1/2 tsp salt
1 large egg
1 Tbsp (15 ml) cooking oil
14.75 oz (418 g) can of creamed corn
1/2 cup (118 ml) milk
1 to 2 large jalapeños diced
1/2 cup (50 g) shredded cheddar cheese
*Buttered 2.7 qt rectangular baking dish*
*Bake at 400 degrees F / 204 degrees C for 22 to 25 minutes
*Once baked, allow to set for 10 minutes, then serve
