Hemingway Burgers With My Oldest Boy
The Ravishing Mrs. Ritter and I are out in San Diego visiting my son Nathan, his wife Caitlin, and our granddaughter Eva. We took the opportunity to fire up some famous Hemingway Hamburgers--these were the reputed favorite hamburgers of Ernest Hemingway himself. We grilled these, but next time we'll cook them in a skillet like Mr. Hemingway liked his. This recipe can be scaled up (we did). Recommend a touch less wine until you can check the consistency.
Ingredients: 1 pound hamburger (85% lean) 2 cloves garlic, minced 2 green onions finely chopped 1 heaping teaspoon India Relish (substitute with Dill relish) 2 tablespoons capers 1 heaping teaspoon sage 1/2 teaspoon beaumonde seasoning (see substitute recipe below) 1/2 teaspoon Mei Yen Powder (see substitute below) 1 egg, beaten 1/3 cup dry red (or white) wine
Mei Yen Powder Substitute: 1 teaspoon soy sauce 1/2 teaspoon kosher salt 1/2 teaspoon sugar
Directions: 1. Mix all ingredients in a large mixing bowl. 2. Chill mixture in refrigerator for 10-15 minutes 3. Form into 1 inch thick patties. 4. Fry in skillet (or over grill) until desired level of doneness.
