In our thirteenth episode, “Unique Kentucky Festivals & Fundraising”, we will visit the Fort Harrod’s Beef Festival in Harrodsburg, KY and learn why KY is the largest beef producer east of the Mississippi; we’ll travel to Winchester, KY for the Beer Cheese Festival and learn how beer cheese started and how it is helping preserve Main Street. Our last story will feature segments on the Woodland Arts Fair. We’ll meet some artists and learn how a few motivated folks decided to showcase their wares over 40 years ago, which has since catapulted into a spectacle with over 200 vendors and thousands of visitors from around Kentucky and the United States. Guest host Kyle Lake, will talk to some concert-goers at the Moontower Music Festival in Lexington, Kentucky. This episode will outline how these unique Kentucky festivals help raise money for some important community charities and what it would be like without these FUN yet critical annual events.

Stack cake
A stack cake is a unique regional variation that replaces a wedding cake, which can be prohibitively expensive in the economically deprived area of Appalachia, United States. Friends and family each bring a layer for the cake, and the bride's family spreads apple preserves, dried apples, or apple butter between each layer. A stack cake looks like a stack of thick pancakes. It is thought to have originated in the Beaumont Inn of Harrodsburg, Kentucky, by the original settler James Harrod. The greater the number of layers, the more popular the couple is considered.
Many types of cake layer recipes exist from sponge-like layers of cake to cookie dough-like ones; sometimes a stack cake includes many variations and flavors. Stack cake parties that do not involve a wedding occur irregularly but typically serve as a way for people to exchange recipes and gossip. Its use is not limited to Kentucky cuisine but all of Appalachia.
In order to accommodate the typical seven or eight layers, each layer was sometimes pressed very flat. A few of more common flavorings used were ginger, apple and molasses.

Betty's Day at Keeneland Horse Race Track--NO RECIPE--
Betty and her husband, Rick, go to Keeneland Horse Race track in Lexington, Kentucky, about 30 miles from our home. There are four restaurants at Keeneland, three of which are open to the public. We obtained a reservation to the Equestrian Room, which has a very nice atmosphere for watching the horse races. It also has very good food! We had a wide variety of foods to choose from for our lunch. Rick settled on a cup of burgoo soup and a Reuben sandwich with potato salad. I ordered the chicken salad, which was served with green and purple lettuce leaves, nestled in a ring of fresh fruit, including strawberries, cantaloupe, honeydew melon, and grapes. All of the food was delicious!
We had a great time betting on the horses. We placed small bets on three of the races, and picked the winner in all three races. We threw in one small bet on a long shot (81:1), and lost on that horse, decreasing our winnings a bit. Altogether, we came out ahead about $5.00. It's a good thing we didn't plan to make money on our bets—just have a little fun!
All in all, the day was a lot of fun, and we were able to show you a little bit of the race track atmosphere, a look behind the scenes, and some terrific food. I will choose one of the items from the Keeneland menu, prepare it according to Keeneland's recipe, and upload it in the next few days!
