EASY VEGAN BURRITO RECIPE
These vegan burritos are so simple to make and incredibly delicious! They take very little time to prepare so they're a great dinner option on a busy day. High in protein, low in fat and completely plant-based! You'll need 1 can of black beans, rice (optional), 1 cooking onion, maple syrup, chili powder, cayenne pepper, coriander, fresh tomatoes, fresh avocados, salsa, refried beans (no lard!), pickled (or fresh) jalapenos and wheat or corn tortilla wraps!

How to make easy Salsa for Burrito
2 Tomatoes (blanched, peeled & chopped)
1 Onion (chopped)
2 Green Chillies (chopped)
1tsp Oregano
2 pinches of Cumin Seeds Powder
3 pinches of Sugar
Coriander Leaves
1 tsp Lemon Juice
Salt (as per taste)
1 tbsp Spring Onion Greens
How to prep the Rice with Vegetables and Beans for a burrito
2 tbsp Olive Oil
2 tbsp Garlic (finely chopped)
1 Onion (sliced)
1/2 Green Capsicum ( cut into strips)
1/2 Red Capsicum (cut into strips)
1/2 Yellow Capsicum (cut into strips)
2 Tomatoes (puréed)
1/2 tsp Cumin Seeds Powder
1 tsp Oregano
1 tsp Chilli Flakes
1tbsp Taco Seasoning ( optional)
3tbsp Ketchup
1/2 cup Corn (boiled)
1/4 cup Kidney Beans (soaked & cooked)
1/2 cup Rice (boiled)
Salt (as per taste)
Spring Onion (chopped)

About Burritos
A burrito dish in Mexican and Tex-Mex cuisine consists of a flour tortilla wrapped in a sealed cylindrical shape around various ingredients. The tortilla is sometimes lightly grilled or steamed to soften it, make it more pliable, and allow it to adhere to itself when wrapped. Burritos are often eaten by hand, as their tight wrapping keeps the ingredients together. Burritos can also be served wet, that is to say, covered in a savory and spicy sauce, where they would be eaten with a fork and knife.
Burritos are filled with a savory filling, including a large array of other ingredients such as rice, cooked beans (either whole or refried), vegetables such as lettuce and tomatoes, cheese, and condiments salsa, pico de gallo, guacamole, or crema.
Burritos are often contrasted with other, similar, dishes such as tacos, in which a small hand-sized tortilla is folded in half around the ingredients rather than wrapped and sealed, or with enchiladas which use masa (maize/corn) tortillas and are covered in a savory sauce, to be eaten with a fork and knife. |

Bean & Cheese Burritos - Restaurant Quality Secrets

These bean and cheese burritos are so tasty, affordable, vegetarian and kid-friendly (my son would eat them every day if I let him!). They are the perfect weeknight dinner.

Bean & Cheese Burritos

Makes 3 - 4
INGREDIENTS
2 cups Brothy Beans (thawed)
¼ teaspoon cumin
¼ teaspoon smoked paprika
Juice of 1 lime
3 - 4 large tortillas
1 cup grated cheese
2 plum tomatoes, sliced
INSTRUCTIONS
Combine 2 cups of Brothy Beans with the cumin and smoked paprika in a small pot and bring to a simmer.
Purée with a potato masher or immersion blender and continue to cook until very thick. Remove from heat and stir in the lime juice.
Layer each tortilla with grated cheese, some bean purée and sliced tomatoes. Add hot sauce and any other add-ins you like. Fold and roll, then cook the burritos in a little bit of oil in a hot pan for about 1 minute per side or until golden.
Serve with sour cream, salsa and guacamole if you like.

Frozen Beefy Cheesy Burritos
This recipe makes 6 burritos that you can store frozen, and reheat in less than 3 minutes. Way better for you and tastes way better than Taco Bell ????
Since this recipe is also so simple (it took me less than 20 minutes from start to finish, minimal ingredients/cooking) - you can easily double or triple the recipe to yield multiple weeks worth of burritos!
Per burrito (makes 6)

Ingredients:
16oz 93% beef
1 packet taco seasoning
200g 2% Greek yogurt
100g red enchilada sauce
60g 2% cheddar
2 laughing cow cheese wedges or 60g light cream cheese
2 tablespoons chopped cilantro (optional)
6 burrito sized tortillas
To reheat - you can simply microwave these for 2-3 minutes (one at a time) and they’ll be good to go! If you prefer a crispy exterior, microwave for ~1-1.5 minutes to defrost, then air fry or pan fry until crispy ????
