Pork Rib Roast Basics
Pork rib roasts (often called rack of pork) are where convenience meets elegance. This basic recipe is quick enough for a mid week meal, or it can be dressed up for a special occasion. Enjoy!
EASY PORK RIB ROAST
8-rib rack of pork, center cut, chine bone off
2 tablespoons sage, chopped
2 tablespoons thyme, chopped
4 tablespoons rosemary, chopped
Salt and pepper, to taste
Preheat oven to 375 degrees F.
Trim rib bones of roast of all extra meat (this is called frenching). You can do this yourself or ask the butcher to do it for you. Season roast on all sides with salt, pepper, sage, thyme, and rosemary. Place roast, fat side up, in shallow roasting pan. Roast 20 minutes per pound, or until internal temperature reaches 145 degrees F. Let it rest 10 minutes, cut between rib bones, serve and feast!

How to Make a Perfect Pork Roast for Christmas Day

I'll use this roast pork method on a pork leg and loin. You can use other cuts however those 2 cuts are my favourite for roast pork!
I just want to elaborate a bit more on covering the skin in foil once the crackling has set. Don't cover it all unless your crackling has set all over. If you have patches that are starting to burn, then you can cover them parts ONLY in foil whilst leaving the rest exposed if it still needs to set.

Garlic and Herb Crusted Pork Loin on the GRILL
Pork Loin is one of the best cuts on the pig. It soaks up the flavors of whatever you put on it and the fat crisps up the outside for both an amazing flavor and texture. In this video, I make an herb crusted pork loin on the gas grill, starting with a whole loin, season it, and grill it to perfection. This one is hard to mess up as long as you hit the right final temperature. I've made this a bunch of times and it is always a hit.
How to Grill a Pork Tenderloin, which is not the same cut as a pork loin:
Herb Crust: (per pound of pork loin)
1/2 tsp salt
1 tsp Dried Italian Seasoning
1/4 tsp Garlic Powder
1/4 tsp Rosemary (if your Italian seasoning doesn't have it)
I grilled this on the Weber Genesis E-330. Sear the outside over medium-high heat for 3-4 minutes per side. Then reduce the temperature to 300-325 F. Put the Pork Loin on the top rack and cook until it reaches 140 F internal. The idea temperature is 145 F, but the temperature should continue to rise after you take it off the grill and let it rest.
If you are going to butcher your own pork loin, I really like a good slicing knife. This one works great and I also use it for brisket and turkey:

Grilled Pork Loin on the BBQ | How to Grill Pork Tenderloin
Pork tenderloin is one of the best cuts on the pig. It soaks up any flavors you put on it and tastes even better when it’s grilled to perfection. In this video we make herb crusted pork loin and a American BBQ style pork loin. Both turned out great, but you’l have to watch the video to find out which one we liked best.
Recipe:
1 2lb Tenderloin:
2 TBSP Olive Oil
2 TBSP Italian Seasoning
1 Tsp Fresh Rosemary
1/2 Tsp Garlic Powder
1 Tsp Salt
1/2 Tsp Pepper
Cover the tenderloin with olive oil mix up the remaining ingredients and coat the meat with a good herb crust. Wrap it up in plastic wrap and toss it in the fridge for a couple hours.
BBQ Tenderloin
1 2LB Tenderloin
1 TBSP Yellow Mustard
Pork Rub
Sriracha BBQ Sauce —
Coat the tenderloin with yellow mustard. Liberally apply the pork rub. Wrap it plastic wrap and put in the fridge for a couple of hours.
Heat the grill to 400 Degrees F and cook all four sides for 4-5 minutes. Once all the sides are browned put it on the top rack and take off the grill when it has reached an internal temperature of 145 degrees F.
