How To make Barbecued Oysters
1 Doz. oysters (large -- fresh)
3 Tbsp. oyster liquid
2 Tbsp. tomato paste
1 Tbsp. chili sauce
1 Tbsp. lemon juice
1/2 Tsp. Worcestershire sauce
1/4 Tsp. prepared horseradish
1/8 Tsp. onion salt
1/4 Tsp. salt
3 Tbsp. bacon flavored cracker crumbs
Place oysters in a single layer in a shallow baking dish. Combine oyster liquid, tomato paste, chili sauce, lemon juice, Worcestershire sauce, horseradish and salt in a saucepan; cook over medium heat 20 minutes. Pour sauce over oysters. Prick oysters with a fork to allow sauce to penetrate. Sprinkle with cracker crumbs. Bake at 350 degrees for 25 minutes. Yield 3 to 4 servings.

Rus's Charbroiled Oysters
24 Oysters
1 cup chopped baby portobello mushrooms
1/2 cup green onions
2 Tablespoons chopped chives
6 slices of cooked bacon, and then crumbled
2 diced up artichoke hearts
2 cups chopped fresh spinach
3 tablespoons of fresh chopped parsley
2 teaspoons of chopped fresh garlic
1/2 cup of Absinthe
1 quart heavy whipping cream
1 tablespoon of Worcestershire sauce
10 ounces of grated parmesan cheese (Aged is better)
1/2 cup of Panko bread crumbs
Fry bacon till crispy and set to the side. In bacon grease, add in mushrooms, and cook for a few minutes until mushrooms start releasing their water. Add in spinach and cook till they begin to wilt, then add in green onion, chives, artichoke hearts, parsley and garlic. Cook for a few minutes, and add in Absinthe, and simmer another few minutes. Now add in heavy whipping cream and Worcestershire sauce and let simmer until reduced by 1/2. After the sauce has reduced by half, add in parmesan cheese, and Panko bread crumbs, and add crumbled bacon. Mix well. Take the oysters that are on the half shell, or other cooking utensil made to cook oysters in, and top with sauce, and cook on a grill until everything is bubbling and the oysters plump up. I toast the top of mine with a Creme Brûlée torch after removing oysters from the grill. Serve with slices of french bread and enjoy!
