How To make Barbecued Oysters
1 Doz. oysters (large -- fresh)
3 Tbsp. oyster liquid
2 Tbsp. tomato paste
1 Tbsp. chili sauce
1 Tbsp. lemon juice
1/2 Tsp. Worcestershire sauce
1/4 Tsp. prepared horseradish
1/8 Tsp. onion salt
1/4 Tsp. salt
3 Tbsp. bacon flavored cracker crumbs
Place oysters in a single layer in a shallow baking dish. Combine oyster liquid, tomato paste, chili sauce, lemon juice, Worcestershire sauce, horseradish and salt in a saucepan; cook over medium heat 20 minutes. Pour sauce over oysters. Prick oysters with a fork to allow sauce to penetrate. Sprinkle with cracker crumbs. Bake at 350 degrees for 25 minutes. Yield 3 to 4 servings.

Perfect Char-Grilled Oysters
Easy char-grilled fresh oysters cooked over Cowboy Lump Charcoal.
Daniel is showing you how quick it is to make this killer recipe at home! It starts with an easy tarragon infused butter sauce and a hint of heat from truffle-infused hot sauce. He shows you how to finish them off by drenching the oysters in that butter bath and finishing them over the flame with a little sharp cheese. All ready in under 20 minutes.
He's using the Cowboy Cauldron today, but this recipe is great for any grill where you can put the oysters over direct heat.
Ingredients:
► 5 lbs fresh oysters
► 2 lbs butter
► 2 tbsp fresh tarragon, minced
► 4 to 5 tbsp Truffle Hot Sauce
► 1 tsp freshly ground black pepper

Grilled Oysters with Lemon Dill Butter

Ingredients
8 tablespoons (1 stick) unsalted butter, at room temperature
1 teaspoon minced garlic
1 teaspoon minced dill
1/2 teaspoon grated lemon zest
1 tablespoon freshly squeezed lemon juice
Kosher salt and freshly ground black pepper
24 large fresh oysters on the half shell
Sea salt or fleur de sel
Directions
Heat a charcoal or gas grill. If using charcoal, make sure you have a full layer of hot coals on the grate.
In the bowl of an electric mixer fitted with the paddle attachment, combine the butter, garlic, dill, lemon zest, lemon juice, 3/4 teaspoon kosher salt and 1/4 teaspoon pepper.
Place the oysters (oyster-side up!) on a platter. With two small spoons, place a small dollop (about 1 teaspoon) of the herbed butter on each oyster. Place lightly crinkled sheets of aluminum foil loosely on the grill grates. Place the oysters on the foil, making sure they're level so the butter doesn't spill out. (The foil keeps the oyster shells from tipping over.) Cover the grill with the lid, making sure the vents are open, and cook for 2 to 3 minutes, until the butter comes to a simmer and the oysters are just heated through. Sprinkle with sea salt and serve hot.
