How To make Banana Shortcake
1/2 To 1 ripe banana
1 ts To 2 ts lemon juice OR a
-pinch of unbuffered, -corn-free vitamin C Crystals, to taste, optional 2 sl Buckwheat Banana Bread (see
-recipe) Servings: 1 This Banana Shortcake makes a satisfying, whole breakfast - it's not a dessert shortcake. Because the Banana Bread is made in advance - and probably frozen - the shortcake is quick and easy to put together. I (Marjorie Hurt Jones) sometimes serve it for "normal eating" house guests who devour every last crumb! Directions: Mash banana with a fork; whip until light and frothy. If you enjoy a little tang, add the lemon juice or the pinch of the vit C. Toast the bread lightly either in a toasster oven or in a dry frypan - homemade quickbreads don't do well in a traditional pop-up toasster. To assemble: Lay toasted bread on a plate; top with a dollop of masshed banana. Note: If your Banana Bread is frozen be sure to take it out the evening before you want it for breakfast. How to decorate Banana Shortcake
Ingredients:
*Prepared Sponge Cake - how to make sponge cake will be shown on a separate video :-)
*4-5 pieces Banana
*Sugar Syrup
1. 34g Warm Water
2. 34g Caster Sugar
Whipped Cream (2 Sets)
1. 18g Caster Sugar
2. 1 tbsp Banana Liquor
3. 250mL Fresh Cream
Procedure:
1. Mix 34g caster sugar and 34g warm water until melted. Set aside.
2. Cut the banana into thin slices. Set aside.
3. Combine 1 tbsp banana liquor and 250 mL fresh cream.
4. Whisk fresh cream on low speed using hand mixer.
5. Brush sugar syrup on each sponge cake layers before spreading the whipped cream and the sliced bananas.
6. Start decorating.

Japanese Strawberry Cake in cups and gram ( Makes 6 servings):
- 2 Egg Yolks
- 4 Egg Whites
- 120 gr Sugar ( 1/2 cup + 2 tbsp)
- 110 gr Milk (7 tbsp)
- 45 gr Butter (3 tbsp)
- 120 gr All Purpose Flour ( 3/4 cup + 1 tbsp)
- 1 tsp Baking Powder
- 1 tsp good Quality Vanilla
- 1 tsp Lemon Zest ( optional )
- Pinch of Salt
- Strawberries for the filling
I used 7 inch pans. Keep in mind the layers are meant to be thin, just like the ones you see in the video.
Whipped Cream:
- 600 gr COLD Heavy Cream ( 22 ounces)
- 1 1/2 tsp Vanilla
- 3 tbsp Sugar ( BUT You can add more sugar based on your personal preference)
- Pinch of Salt
Whip to medium peaks.
For a sturdier whipped cream you can add 200 gr Mascarpone.
