This peach dessert is a winner!
I make my southern inspired peach cornbread muffins.
PEACH SHORTCAKE WITH CINNAMON WHIPPED CREAM!! RETRO RECIPE!!
Today we are revisiting a classic! Old fashioned peach shortcake. Using the peach topping and sweet cream shortcake biscuits from previous videos we are going to build an eternal summer favorite! Shortcake is a wonderful way to use up nature's bounty this time of year and if you have only ever used strawberries, then peaches are something you are going to love!
I know that you all know how to build yourself a delicious bowl of shortcake! Biscuit, cake or some sort of base topped with your favorite sweetened fruit and then topped with either a drizzle of sweet cream, which is the way my mom always served it, or a scoop of ice cream or in this case a generous dollop of fresh cinnamon whipped cream.
I am sharing how to make the whipped cream and even if you have seen it done before, it's a good reminder. Cold cream is essential as well as cold equipment, so before you get ready to make it, stick the bowl and the beaters in the freezer for 20 to 30 minutes and you'll be good to go.
I am using Torani cinnamon vanilla syrup to sweeten and flavor my whipped cream but if you don't have that use 1 cup of cream and 1/4 cup of confectioners sugar as well as 1 tablespoon of vanilla extract. Start the beaters slow and gradually increase the beater speed until you are whipping at the highest speed. This will help to achieve soft peaks gradually.
At the soft peak stage I am adding a half teaspoon of ground cinnamon as well as a tablespoon of instant clear jel to stabilize the whipped cream. If you don't have this don't worry. You can easily go without. I like to stabilize my cream so that I can store it in the fridge without it turning back into liquid. I will leave a link below to a shopping list where you can find the clear jel that I prefer.

Now you can build your shortcakes and top with that delicious cinnamon whipped cream. Enjoy like you did when you were a kid and bask in the memories of your grandma and enjoying those fresh, juicy peaches and that sweet cream. Nothing like memories to stir up nostalgia!

4 pounds (1.8kg) fresh firm but ripe peaches, halved, pitted, and cut into 1⁄2-inch wedges, or thawed frozen sliced peaches
3⁄4 cup packed light brown sugar (5.8 oz / 165g)
1 tablespoon cornstarch
1 1⁄2 teaspoons ground ginger
1⁄2 teaspoon ground cinnamon
1⁄4 teaspoon ground nutmeg
1⁄2 teaspoon Diamond Crystal kosher salt or 1⁄4 teaspoon Morton kosher salt
3 tablespoons fresh lemon juice
2 teaspoons vanilla extract
All-Purpose Drop Biscuit Dough
(page 336), formed into biscuits and chilled
Heavy cream, for brushing and serving Demerara sugar, for sprinkling
All-Purpose Drop Biscuit Dough
1⁄3 cup sugar (2.3 oz / 66g)
1 teaspoon finely grated orange or lemon zest
3 cups all-purpose flour (13.8 oz / 390g), plus more for the surface
4 teaspoons baking powder
