How To make Banana Nut Bread2
8 tablespoons butter
3/4 cup packed brown sugar
3 ripe bananas
1 carrot -- shredded
1 teaspoon lemon juice
2 eggs
1 1/4 cups self-rising flour
1/2 teaspoon ground nutmeg
1/2 cup chopped pecans
Mix together butter and sugar in mixing bowl. Add bananas, carrot, lemon juice and eggs. Mix well with electric mixer. Stir together flour and nutmeg. Add flour mixture to banana mixture. Stir just until flour is incorporated. Stir in pecans. Line an 8? square glass baking dish with wax paper. Pour batter into pan and microwave on high about 8 minutes until toothpick inserted in center comes out clean. (Rotate dish every 2 minutes, unless you have a microwave with a rotating dish inside already!) Let bread rest for 5 minutes. Turn out onto a wire rack to cool. Peel off wax paper. Cut bread into squares to serve.

Kathy's Recipe Banana Nut Bread Ingredients
For one loaf
2 1/2 cups all purpose flour
1/2 cup granulated sugar
1/2 cup packed brown sugar
3 1/2 teaspoons baking powder
1 teaspoon salt
3 tablespoons vegetable oil
1/3 cup milk
1 1/4 cups mashed bananas (2-3 medium)
1 egg
1 cup chopped nuts
Heat oven to 350 degrees. Grease bottom only of loaf pan, 9x5x3 inches, or 2 loaf pans, 8 1/2x41/2x2 1/2 inches. Mix all ingredients; beat 30 seconds. Pour into pan(s). Bake until wooden pick inserted in center comes out clean, 9 inch 65 to 70 minutes, 8 inch 55 to 60 minutes; cool slightly. Loosen sides of loaf from pan; remove from pan. Cool completely before slicing. To store, wrap and refrigerate no longer than 1 week.
If using self-rising flour, omit baking powder and salt.
