How To make Banana French Toast with Blueberry Topping
3/4 cup skim milk
1 medium banana -- sliced
2 egg whites
1/4 teaspoon nutmeg
8 slices whole wheat bread
BLUEBERRY TOPPING 1 tablespoon cornstarch
1/4 teaspoon cinnamon
1/2 cup water
2 tablespoons honey
2 cups fresh or frozen blueberries
Heat oven to 425*. Spray 15x10x1 inch baking pan with cooking spray. In blender container or food processor bowl with metal blade, combine milk, banana, egg whites, and nutmeg. Blend until smooth. Pour into shallow bowl or pie pan. Dip bread in egg mixture; place in sprayed pan. Pour any remaining mixture over bread slices. Bake for 12 minutes. Turn and bake an additional 10 minutes or until golden brown.
Meanwhile, in small saucepan combine cornstarch, cinnamon, water and honey; blend well. Stir in blueberries. Cook over medium heat until mixture boils and thickens, stirring constantly. Serve over French Toast.
NUtrITION PER SERVING: 270 calories, 2 g fat, 9 g protein, 54 g carbohydrate, 2 mg cholesterol, 320 mg sodium, 420 mg potassium, 6 g dietary fiber.

Ingredients
1 1/2 cups all-purpose flour

Blueberry French Toast
Ingredients:
15 slices cinnamon bread
4 ozs. cream cheese
1 cup fresh blueberries
6 large eggs
1 cup milk
1/3 cup maple syrup
Sauce:
1 cup sugar
2 tbsp cornstarch
1 cup water
1 1/2 cups fresh blueberries
1 tsp butter
Directions:
1. Place the Flexipan Sunflower Mold on the Perforated Baking Sheet. Cut crust from bread and cut bread into 1 cubes. Place in the mold. Cut cream cheese into small chunks and spinkle on top of mixture. Top with 1 cup blueberries.
2. Combine eggs, milk, and maple syrup and pour over bread mixture. Cover with Octagonal Silpat and chill overnight. Preheat oven to 350 degrees. Bake for 30 minutes covered and 30 minutes uncovered (mixture needs to be set in center).
3. Cool slightly and unmold. For sauce, combine sugar, cornstarch and water in Petite Sauce Pan. Boil until thick, and then add blueberries and butter. Simmer 3-5 minutes or until thick. Serve over french toast. Maple syrup can be used instead of blueberry sauce.
