How To make Banana Stuffed French Toast
1 Loaf sourdough bread
1 ts Cinnamon
1/2 c Sugar
4 Bananas halved cross and len
4 Eggs
1 c Half and half
1 ts Vanilla
Cut a pocket in each slice bread; divide the banana's and stuff in the bread. Whisk together the eggs and half and half. Saturate each side of bread slices. Grill bread slices in oil or butter on both sides, until golden. Combine the sugar, cinnamon and vanilla, sprinkle over the top of the the French Toast. Enjoy, Sheryl

These banana bread toasts are the perfect breakfast! They are quick and easy to make, only basic ingredients required and anyone can make them. These banana French toast roll-ups are crispy on the outside and filled with delicious banana filling on the inside.

Ingredients:
3 medium Bananas or 2 large
2-3 tablespoons Butter
1 tablespoon Sugar (brown/white)
2 Eggs
2 tablespoon Milk
6 Bread slices
1/4 teaspoon Cinnamon, optional
Directions:
1. Trim the edges of slices bread, then flatten each bread with a rolling pin. Set aside.
2. Slice the bananas, melt one tablespoon of butter in the pan. Add sliced bananas, 1 tablespoon of sugar and cook for about 3-4 minutes, until softened.
3. In a bowl, beat eggs, milk and cinnamon.
4. Spread about 1-2 tablespoons of banana mixture over each slice of bread. Brush with egg mixture. Roll and seal.
5. Dip each roll in egg mixture.
6. In a pan over medium heat, melt 1-2 tablespoons of butter. Fry each roll until sides are golden.
7. Drain on a paper towel. Dust with powdered sugar and serve warm.
8. Optional: prepare sugar cinnamon mixture by mixing 1/4 cup sugar and 1/2 teaspoon cinnamon. Then coat each banana roll in sugar mixture.

Peanut Butter Banana Stuffed French Toast

This is for the mornings when you want a little sweet & a little salty!

Makes 2 Sandwiches:
4 Slices King's Hawaiian Bread or Texas Toast
1/4 Cup Creamy Peanut Butter
1 Medium Banana, sliced in ½ inch pieces (I mashed mine)
2 Eggs
1 Cup Milk
1 Teaspoons Vanilla Extract
½ Teaspoon Cinnamon
1 Cup Peanut Butter Cereal, crushed (I used Peanut Butter Captain Crunch)
1 Tablespoons Unsalted Butter
Maple Syrup for serving
- Preheat a skillet on medium-high heat on the stove top.
- Spread 1-2 Tablespoons of peanut putter on each of the 2 pieces of sliced bread. Top evenly with the banana slices. Cover with remaining 2 slices of bread to create sandwiches.
- In a bowl, whisk together the eggs, milk, vanilla and cinnamon.
- Place each sandwich in the bowl to soak up the custard mixture for 10 seconds on each side. Next, dip the custard soaked french toast into the bowl of crushed peanut butter cereal. Coat each side well.
- Add butter to the preheated skillet.
- Cook each sandwich for 2-4 minutes on each side.
- Serve with warmed syrup or extra peanut butter for spreading.
