INGREDIENTS:
(makes 10 mini waffles)
1.5 cups/200g all Purpose flour
2 tsp baking powder
pinch of salt
1 tsp ground cinnamon
2 ripe bananas, mashed
6 tbsp/85g unsalted butter, melted
1 egg
1 cup/240g milk
1/2 tsp vanilla extract
1/4 cup/40g caramel chips
Optional for topping:
maple syrup
sliced bananas
whipped cream
DIRECTIONS
1. Preheat waffle iron. Stir together flour, baking powder, salt, and cinnamon. Set aside.
2. Beat egg with mashed banana. Stir in butter. Proceed with vanilla and milk.
3. Stir in flour mixture until almost blended. Fold in caramel chips.
4. Make waffles in waffle iron.
5. Serve warm with maple syrup, fresh banana slices, and whipped cream!

Homemade Banana Waffles from scratch will be your new weekend favorite!
These homemade waffles are made with ingredients you probably already have in your pantry!
Tips:
Overripe Bananas - Fresh or frozen, The star of the show! Use a ripe banana with brown to black spots for the most flavor and extra sweetness.
Flour -all-purpose, but they're also great with some whole wheat flour or a gluten-free flour.
Milk - fresh milk, even a nut milk works great.
Egg - fresh eggs, You’ll need two eggs to help with binding, give the waffles structure and ensure they cook properly.
Baking Powder - The leavening agent to help get those waffles fluffy!
Oil - I used oil but you could also use butter
Sugar - brown, but if all you have is white go ahead and use it,
Cinnamon Powder: . For a boost of flavor! Feel free to add any spices you’d like – cinnamon and/or nutmeg would taste amazing!
Mix dry ingredients. In a large bowl, whisk together the flour, baking powder , cinnamon and salt.
beat the eggs, vanilla and sugar until light and fluffy.
Stir in the ,oil, milk and banana . Stir until just mixed. Some small lumps are fine.
Let batter rest. For best results, rest the waffle batter for 5 to 10 minutes. This will allow the gluten in the flour to relax and the starch grains to swell and will make for the most light and fluffy waffles.

Sliced almonds or chopped pecans. Love that nutty flavor and added crunch!
