bananas, ripe, well mashed (2 or 3)

walnut meats (optional)
Directions:
Leftovers keep well in the refrigerator and can be sliced and toasted before serving again. Banana Bread also freezes well. Use overripe banana.
Sift the flour, baking powder, baking soda, and salt together. With the electric beater on low, fluff the shortening until soft and creamy in a small bowl. Or beat by hand until fluffy. Add the sugar gradually. Beat in the eggs and dark corn syrup in a slow stream. With a fork, beat into the shortening a third of the bananas, half the flour, another third of the bananas, the remaining flour, and the last of the bananas. Fold in the walnut meats. Turn into a greased and floured 1 1/2-quart mold and cover with a loosely fitting plate. Place the mold on a rack or a trivet in the cooker. Cover the cooker, but prop the lid open a fraction with a toothpick or a twist of foil to let excess steam escape. Cook on High for 2 to 3 hours, or until the bread is done. Cool on a rack for 10 minutes, then turn the bread out of the mold. Dust over with brown sugar and serve warm.

It’s best to use bananas that are a bit older as they will mash easier and have a sweeter flavour to them. If you know your bananas are a bit bland and flavourless you might want to consider increasing the sugar to 1 cup.
There are a ton of variations that you’re able to do with this recipe. For example, you can add chopped pecans or walnuts to the mix for a bit of an extra crunch. If you love chocolate, then some chocolate chips in the banana cake mix works great.
As with any slow cooker recipe you may find this will cook faster or slower depending on the size of the device you’re using. For example, if you’re using a small crock pot then it will take longer to cook as the mix will be thicker.

Banana bread in the crockpot
Banana bread in the crockpot is perfect if your oven is unavailable or broken or if you have errands to run or even if you like a dense steamed like bread. I've used my recipe that is vegan but any recipe will work. I have a smaller diameter crockpot so keep in mind if yours is wider than 8 to cut the cooking time down. If you have an oval or rectangular crockpot, try putting the batter into a round cake pan or a loaf pan, then you make have to increase the cooking time.
Banana Bread (Vegan)
3 medium ripe bananas
1 1/2 C. Flour
1/2 C. oil
1/2 C. sugar
1 tsp. vanilla
1 1/2 tsp. baking powder
1/2 tsp. baking soda
pinch of salt
parchment paper
cooking spray
Mix all ingredients together, prepare crockpot with parchment paper as the video shows. If you are using a cake pan in a larger crockpot you wont need to put parchment paper in it. Cook for 1 1/2 hrs. on high then check it. If a toothpick inserted comes out clean then it is done. Let lid sit askew for a few minutes if there is a lot of water on the cake. Let cool almost completely before trying to remove from the crockpot. If it's too warm it will break.
