Today I'm going to show you how to make baked oats.
These savory baked oats are great for quick weeknight dinner.
Healthy and cheap dinner option, which is easy to make and taste delicious, either hot or cold!

BAKED OATS RECIPE
(makes 6 slices)
Ingredients:
2 cups rolled oats (180g)
1/4 cup ground oats, or oat flour (25g)
1 tsp baking powder
1 cup milk, dairy or non-dairy (240ml)
1 cup water (240ml)
2 eggs
1 tsp salt
1/4 tsp black pepper
1 tsp Italian seasoning
1/2 cup grated melting cheese - gouda or cheddar cheese (50g)
1/4 cup grated parmesan cheese (20g)
1 medium onion
2 cloves garlic
1 small zucchini (130g)
1/3 cup frozen peas (50g)
1/2 cup diced tomatoes (80g)
NUTRITIONAL INFO (per slice):
223 calories, fat 7.9g, carb 27.3g, protein 11.4g
Preparation:
First, saute onions and garlic over medium heat for 3-4 minutes, then add sliced zucchini and frozen peas and cook for next 3-4 minutes.
Add rolled oats and toast for 5 minutes, to develop lovely nutty flavor.
While it's cooling down, prepare the wet mixture. In a bowl add, eggs, milk, water, salt, black pepper, Italian seasoning, grated gouda or cheddar cheese, ground oats combined with baking powder, and mix it well.
Now, add the vegetables and toasted oats and stir well together. Let it sit for 10 minutes.
Grease your baking dish with some butter and pour the mixture in.
Bake at 350F (180C) for 40 minutes.
Let it cool for 10-15 minutes, then cut in 6 equal pieces and serve with spoonful of Greek yogurt and drizzle of hot sauce.

INGREDIENTS
- 4 eggs
- 3/4 cup applesauce
- 1 cup Greek yogurt
- 1 cup whole milk
- 2 tsp vanilla extract
- 1/2 cup honey
- 6 cups old-fashioned rolled oats
- 3 tsp baking soda
- 1 tsp salt
INSTRUCTIONS
- Preheat oven to 350°F. Grease a 9×13-inch baking dish and set it aside.
- In a large bowl, whisk the eggs. Once whisked, mix in the applesauce. Add the Greek yogurt and milk and whisk to combine. Pour in the vanilla extract and honey. Whisk until smooth. Add the oats, baking soda, and salt. Using a spatula, fold to combine.
- Pour into the prepared baking dish and bake in the preheated oven until the baked oatmeal is golden and set in the middle, 30-40 minutes. Remove from the oven and cool for 10 minutes before slicing.

A PERFECT BREAKFAST: SUPER HEALTHY SAVORY BAKED OATS
This super healthy savory baked oat is exactly what you need for a delicious yet filling and somewhat different breakfast to start the day feeling energized and of course, happy!
INGREDIENTS:
2 tablespoons of olive oil
1 small onion, minced
1 small red bell pepper, minced
1/3 cup frozen peas
1/2 cup diced tomatoes, seedless
1/3 cup of carrots, minced
1 cup of kale, julienned
2 cups of rolled oats
1/3 cup oatmeal flour
1 teaspoon of baking powder
2 tablespoons of lemon juice
1 cup of unsweetened plant milk
1 cup of water
3 tablespoons of ground flaxseeds
salt to taste
black pepper to taste
1/2 teaspoon dried oregano
1/2 teaspoon dried sage
1 teaspoon of garlic powder
1/4 teaspoon turmeric powder
1/4 cup of nutritional yeast
FOR THE TOPPING:
1/2 tablespoon of olive oil
1/2 tablespoon og ketchup
1/2 tablespoon of vegan mayo
2 tablespoons of unsweetened plant milk
1 CUP: 230 ml
1/2 CUP: 125 ml
1/3 CUP: 83 ml
1/4 CUP: 62 ml
FOR THE TARTAR SAUCE:
INGREDIENTS
100 g vegan mayonnaise
1 tablespoon of pickles, finely diced
1 tablespoon of capers, finely diced
1 teaspoon of lemon juice
1 tablespoon of fresh parsley
1 teaspoon of horseradish
1/4 teaspoon of sugar
Salt & pepper to taste
METHOD
Add all ingredients to a small bowl and mix together.
METHOD:
Add olive oil to a pot, turn the heat to medium high, when hot, add the minced onions and let them brown
Add the red bell peppers, the carrots, add a pinch of salt and sauté for a few minutes.
Add the kale or spinach, allow it wilt
Add the frozen peas, then lower the heat to medium and add the rolled oats, toast it for a few minutes
Turn ff the heat and allow it to cool completely
Preheat the oven to 180C 350F
Add the oats to a bowl, add the tomatoes, oatmeal flour, nutritional yeast, ground flaxseeds and spices and herbs: salt, black pepper, dried oregano, dried sage, turmeric, and garlic powder.
Mix to combine
Add the unsweetened plant based milk and the water, mix to combine, cover with shower cap and let it sit for 10 minutes.
After this time, add the baking powder and lemon juice, and mix again
Grease a 8 x 8 inches baking tray, then add a parchment paper, grease it again, then add the oats to the baking tray and without pressing, level the top evenly, do not press it.
For a golden top, mix catchup (recipe here) vegan mayonnaise, the one with oil, olive oil, and unsweetened plant-based milk, and brush it on top of the oats.
Put in the oven and let it bake for 35 to 40 minutes.
Serve it with vegan tartar sauce!

Ingredients:
1 cup of oats (90g)
1 Tbsp of white granulated sugar (14g)
1 tsp of ground cinnamon (2g)
1/2 tsp of baking soda (2g)
1/4 tsp of salt (1g)
1/2 cup of milk, whole, 2%, skim, almond, etc. (118ml)
2 large eggs
1 large ripe banana
1 Tbsp of honey (21g)
2 to 3 Tbsp of chocolate chips, optional (28 to 42g)
1/4 cup of walnuts, pecans, raisins, craisins, blueberries, etc. optional.

Food processor or blender:
Spatula
Mini bread loaf pans or 1 4x8 inch loaf pan
Cooking spray or shortening/butter
Makes 2 to 4 servings. Bake at 350 F/176C for 25 to 35 minutes until a toothpick comes out clean when poked in the center.
