How To make Baked Cod with Stuffing
Ingredients
1
each
cod, whole head, fin, tail removed
1
salt pork, fat back, sliced
STUFFING:
2-3
cup
bread crumbs
1
salt, pinch
1
each
onion, chopped
2
teaspoon
savoury
1/4-1/2
cup
butter, melted
1
each
potato, cooked, mashed
1/4
cup
celery, finely chopped, optional
Directions:
Stuffing: Mix all ingredients together well. Should be able to form into a ball. Stuff into cod immediately before baking.
Remove bone from whole cod (head, tail and fins removed). Stuff interior of cod with savoury stuffing (see below). Bind cod with twine to hold in stuffing, and top generously with salt pork fat back.
Bake cod with open side/salt pork up at 350 degrees F for one hour or until salt pork is brown and crunchy.
NOTE: you can sub in bacon for the salt pork, but it is good with the salt pork. Enjoy!

INGREDIENTS
- 1 large wild caught Cod fillet
- ~3 cups fresh chopped asparagus
(~1 in pieces, make sure to remove the bottoms)
- ~3 cups baby red potatoes cut into quarters
- Extra virgin olive oil
- Seasonings: salt, pepper, Flavor God Garlic Lovers, Flavor God Lemon & Garlic.

DIRECTIONS
1. Cut the potatoes and add to a large mixing bowl. Add in olive oil, salt, pepper and Flavor God Garlic Lovers. Give a good toss then place on a baking sheet lined w/ parchment paper. Place in the oven at 400 for ~15 minutes.
2. While the potatoes are in the oven, Prep the asparagus and the cod. Cut the asparagus and add to the large mixing bowl. Add in olive oil, salt, pepper and Flavor God Lemon & Garlic. Give a good toss. Cut the cod into smaller fillets.
3. Once the ~15 minutes are up, remove the potatoes and add the asparagus to the pan. Mix and create slots for the Cod then add those next. Hit the cod with a olive oil and season the same as the asparagus. Add a slice of lemon on top of each one then place back in the oven for ~12-15 minutes or until largest piece hits 145 degrees internal.
4. Remove from oven, garnish with chopped parsley and extra lemon juice.

LEMON CRUSTED BAKED COD, RICHARD IN THE KITCHEN
Easy baked cod recipe just like you get in your favorite cafeteria. Wild caught cod topped with a mayo and lemon based sauce then baked until the crust is golden brown and the fish is super flaky.
Shopping List:
Wild caught cod fish
Kosher salt and course black pepper
1 tsp. Lemon juice
2 tbls.Lemon zest
1/4 cup mayo
1 tsp. Dijon mustard
1/2 cup Ritz crackers
Sprinkle of white wine
Directions:
Pre-heat oven to 350 degrees
Season the cod fillets with a sprinkle kosher salt and black pepper
Place the cod in the oven for 5 mins. After 5 minutes, remove and sprinkle with white wine.
Prepare the sauce with the mayo, lemon zest and lemon juice
Crumple up the Ritz crackers in a plastic bag.
Remove the cod from the oven and give it a sprinkle of white wine. Place back in the oven for 7 more minutes.
Remove the cod from the oven and topit with the sauce then sprinkle the Ritz crackers over the top of the sauce.
Place back in the oven for 2-3 minutes.
Serve with lemon wedges and your favorite seafood sides.

Baked Cod with Panko Thyme Crust
With just a few ingredients you can make this quick and delicious baked fish !
I'm using cod since the fish market was out of halibut , which I would have preferred, but any white fish works well with this recipe. You can use breadcrumbs instead of Panko if you like and be careful not to overbake the fish otherwise it will be dry .
