How To make Chicken with Sauce Supreme
2 1/2 lb Broiler-fryer Chicken
1 tb Salt
1/8 ts Pepper
1 cn Chicken Soup *
2 ts Dried Parsley Flakes
1 cn Onions **
3 c Hot Cooked Rice
* Chicken Soup should be a can of Condensed Cream Of Chicken Soup (10 3/4 ozs.)
** Onions to be whole onions, drained, (16 ozs) ~

Cut chicken into pieces; cut each breast half into halves. Arrange chicken sides up and thickest parts to outside in oblong baking dish, 12 x 7 1/2 x 2-inches. Sprinkle with salt and pepper.
Cover loosely and microwave on high (100%) until chicken is done, 20 to 25 minutes. Remove chicken from dish; reserve juices. Stir soup and parsley flakes into chicken juices. Arrange chicken in dish, coating with soup mixture. Add onions. Cover loosely and microwave unti hot, 7 to 9 minutes. Serve with rice. -----

Shallots 3
Garlic 1 clove (opt)
Mushroom a handful
Dijon mustard 2 tsp
Brandy 2 shots
Worcester sauce 1 tbsp
Double cream or creme fraiche 2 tbsp
Brown chicken or beef stock 100ml - 3.4 fl oz
Butter a couple of knobs
Parsley and thyme
Salt and pepper
Supreme Sauce Chicken - Chef Thomas Keller's Sauce Supreme, Chicken, Scallops, Gnocchi
Today, I made Supreme Sauce Chicken, a chicken dish using Chef Thomas Keller's Sauce Supreme!
This time I paired it with gnocchi that I've made previously and scallops.
The recipe for the sauce supreme comes from The French Laundry, and Per Se cookbook.
You might realize that it's similar to the video I've made previously testing out Chef Thomas Keller's 3 Michelin star sauce recipe.
That time, I made the dish just wanting to taste the sauce supreme; chicken was very purely chicken without any added spice or flavors, as well as the vegetables. This time however, I wanted to do more. I designed a dish using the sauce supreme as the core component of the dish!
I liked how it came out and it certainly was as tasty as I remember!

3 Michelin Star Sauce Recipe | Chicken Roulade with Chef Thomas Keller's Sauce Supreme
This video is my replication of Chef Corey Chow's Sauce Supreme. I put together this dish after reading a recent book by chef Thomas Keller, on how he and chef Corey Chow, Chef De Cuisine of Per Se in New York, elevated the classic Sauce Supreme.
The Sauce Supreme was indeed crazy good. It was so condensed and concentrated in the pure chicken flavor, with a very smooth mouthfeel from the reduction of cream and gelatin content from the stock.
