Meat Loaf

Ingredients
1 tablespoon good olive oil
3 cups chopped yellow onions (3 onions)
1 teaspoon chopped fresh thyme leaves
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
3 tablespoons Worcestershire sauce
1/3 cup canned chicken stock or broth
1 tablespoon tomato paste
2 1/2 pounds ground chuck (81 percent lean)
1/2 cup plain dry bread crumbs (recommended: Progresso)
2 extra-large eggs, beaten
1/2 cup ketchup (recommended: Heinz)
Directions
Preheat the oven to 325 degrees F.
Heat the olive oil in a medium saute pan. Add the onions, thyme, salt, and pepper and cook over medium-low heat, stirring occasionally, for 8 to 10 minutes, until the onions are translucent but not brown. Off the heat, add the Worcestershire sauce, chicken stock, and tomato paste. Allow to cool slightly.
In a large bowl, combine the ground chuck, onion mixture, bread crumbs, and eggs, and mix lightly with a fork. Don't mash or the meat loaf will be dense. Shape the mixture into a rectangular loaf on a sheet pan covered with parchment paper. Spread the ketchup evenly on top. Bake for 1 to 1 1/4 hours, until the internal temperature is 160 degrees F and the meat loaf is cooked through. (A pan of hot water in the oven, under the meat loaf, will keep the top from cracking.) Serve hot.

Ingredients:
Set A
1/4 kilo ground beef
¼ kilo ground pork
½ cup fatty bacon
½ cup onion
3 cloves garlic
½ cup carrots
1 tablespoon dried herbs
1 tablespoon salt
1 tablespoon cracked black pepper
Set B
½ cup cream
3/4 cup breadcrumbs
2 eggs
Salt, to taste
Set C
7 strips bacon
Set D (Gravy)
4 tablespoons butter
4 tablespoons flour
1 canned mushrooms
1 tablespoon soy sauce
2 cups beef stock plus pan dripping
2 tablespoons cream
1 clove garlic
Black pepper
Set E (Glaze)
2 tablespoons soy sauce
¼ cup catsup
¼ cup honey

Bacon-Wrapped Meatloaf Recipe | Half Homemade
| Classic meatloaf gets a flavorful update in this Half Homemade recipe for Bacon Wrapped Meatloaf! Packed with flavor, David’s meatloaf recipe turns this comfort food classic up a notch with the addition of bacon! You’ll be able to make this tasty dish in record time using David’s supermarket shortcuts.
Makes 8 Servings
Ingredients:
1 pound sliced bacon
2 1/2 pounds meatloaf mix
1 cup minced yellow onions
2/3 cup seasoned Italian bread crumbs
1/2 cup milk
2 large eggs, lightly beaten
3 tablespoons Worcestershire sauce
2 1/4 teaspoons freshly ground black pepper
1 3/4 teaspoons garlic salt
1/2 cup ketchup
Directions:
1. Heat the oven to 350 degrees F.
2. Set aside 9 slices of bacon. Chop the remaining bacon.
3. Place the chopped bacon, meatloaf mix, onions, bread crumbs, milk, eggs, Worcestershire sauce, pepper, and garlic salt in a bowl. Using clean hands, combine the meatloaf mixture, but don't overmix.
4. Place the mixture in a 9x13-inch baking pan and shape into a loaf form. Arrange the reserved 9 bacon slices over the loaf, overlapping them slightly and tucking underneath to keep them from curling while the meatloaf cooks.
5. Bake the meatloaf for 1 1/2 hours, until an instant-read thermometer inserted in the center registers 160 degrees F. Turn the broiler to high and broil the meatloaf until the bacon is browned and crisp, about 3 minutes.
6. Remove the meatloaf from the oven and brush the ketchup on top. Let the meatloaf rest for 5 minutes, then remove to a cutting board and slice.
